Exotic sodas and snacks from LA's premiere food truck

"Having grown from an underground Compton pop-up to running a fleet of food trucks and publishing cookbooks, Trap Kitchen’s owners are taking their soul food to Las Vegas for a four-week residency at MGM’s Mandalay Bay and Luxor from January 29 to February 25, 2023 as part of a Pepsi-sponsored initiative that brings Black restaurateurs and chefs to major culinary cities." - Jean Trinh

"Closing out the program in February, Los Angeles-based California-Cajun restaurant and brand Trap Kitchen will hold a residency as part of the series and is noted to be launching a restaurant in Houston this fall." - Brittany Britto Garley

"Named in honor of the tripleta sandwich, the Triple Threat Truck is LA’s only Puerto Rican food truck and a standard-bearer for Puerto Rican cooking in the city. Owner and chef Omayra Dakis serves mofongo and loaded tostones (a nachos-inspired dish), but the truck is perhaps best known for its monstrous tripleta sandwich: sweet pan sobao stuffed with three grilled meats, potato sticks, veggies, and mayo-ketchup; she also offers a mofongleta, a tripleta wrapped in mofongo and molded like a burrito. The truck stops around Highland Park, North Hollywood, and Culver City, and Dakis — who has been cooking Puerto Rican food since she was 4 — has shifted away from relying on Goya after the company’s controversy: she estimated she once spent about $15,000 to $20,000 a year on Goya Adobo and other products, but now makes her own adobo (a process that requires a full day of prep) and shares replacements and recipes with the community." - Bill Esparza

"Some restaurants, like Hotville Chicken and the Trap Kitchen food truck, continue to hold on, offering food to locals and those willing to drive for pick-up." - Farley Elliott
