1 Question, 5 Green Star Chefs: Is Veganism Sustainable?

"Brian Wawryk and Daniela Hasse from Traube highlight the complexities of sustainability in the context of veganism. They emphasize the importance of local fruits and vegetables for a sustainable diet. They express admiration for veganism but acknowledge the challenges in Germany due to the availability of produce. They maintain a focus on fruit and vegetables but include meat and fish in their offerings." - The MICHELIN Guide UK Editorial Team

Traube

"A beautiful historical house in the small wine-growing village of Blansingen. The couple who run the place have plenty of experience in high-end gastronomy (Maaemo in Oslo, La Vie in Osnabrück), and it's immediately obvious that professionals are at work here. Headed up by the charming Daniela Hasse, the front-of-house team is pleasantly informal, chatty and highly professional. Canadian-born head chef Brian Wawryk never fails to impress with his meticulous craftsmanship and well-balanced dishes. His modern cuisine has a clear Nordic character, but also focuses on regional tradition, including ingredients preserved the year before. Insider tip: in winter, try to bag yourself the small table in the "Kuschelecke" ("cosy corner") by the tiled stove! The leafy terrace beckons in summer. Bear in mind that Traube is also a great place to stay overnight." - Michelin Inspector

+ Excellent hosting. One of the most tasteful menus Ive ever tried. Greatly balanced and well presented plates. Amazing wines. Every ingredient on every plate feels so fresh!! - For us only sometimes the timing between the courses was a bit long. * I would definitely recommend this restaurant and will go back. Great thanks to the chef!!

Absolutely superb dining experience! One of the best, most refined dinners we've had the pleasure to enjoy! Such great care, detail and precise execution of a delicious meal by the chefs and owners. We enjoyed the juice pairing instead of the wine pairing to try something unique and it did not disappoint! Desserts were amazing!

Went here with my family for a special birthday dinner and it was fantastic. The food was stellar and beautifully presented. I also much appreciated the possibility of juice pairing with the multi-course menu. The juices were homemade and innovative and adult (though also enjoyed by my teenagers).

This rating is for the restaurant: The food was incredibly delicious, we were quite amazed to discover such a place in a small remote village. The menu is 6 dishes, for which you can choose wine or juices pairings (the wine pairings were spot on !). Food is prepared with seasonal ingredients from the region. The restaurant has small capacity (about 15seats), but the tables and seats are very comfortable, and the service was wonderful. Will definitely go back.

Super dinner, great hosting skills, relaxing environment. Each ingredient Is seasonal and local. Lots of work behind each meal. Surprising flavors. We would probably suggest to dare a bit more with the wine pairing.
