In the industrial part of Oakland, had the pleasure of joining a private dinner at Truffle Shuffle with French Laundry alums Tyler Vorce and John McKinney manning the kitchen (and his lovely wife Sarah tending the tables). The dinner is in a home that serves as their headquarters as well. Seating for 12. BYOB. Seasonal menu makes the meal unique as are the other truffle enthusiasts joining the meal.
*~MENU 6/2/2019~*
Asparagus Salad: beech mushrooms, walnuts, truffle vinaigrette
English Pea Raviolo: summer truffle confit, Parmesan mousse
Roasted Chicken Breast: fresh bean ragout, radishes, black truffle sauce
Blackberry Ice Cream: served on a bed of Rainier cherries, topped w/ pistachios and mint
Upon passing through the iron gates, we could smell the truffles wafting towards us. Entering the establishment, we were greeted with a glass of champagne and a profiterole topped w/ shaved Parmesan nestled on a dollop of truffle aioli. Typically the meal doesn't include a wine paring but since several close friends of the chefs were joining, they were kind enough to provide some for the rest of the diners throughout the meal. It was fun mingling with the other dining guests while we waited.
A dinner bell rang to signify the start of the meal. When seated, a mini eggs Benedict was placed in front of us as a nice surprise off-the-menu treat as they went over a little about themselves and the story of their journey thus far into this venture. Soon after, the rest of the meal began. Everything was amazing, but everyone's favorite was definitely the raviolo, the egg was inside was done perfectly and the yolk oozing into the Parmesan mousse was just exquisite.
Would highly recommend going and sign up for their email list for updates. I'm looking forward to their salt releasing in July where they are sourcing salt from Bali made in the traditional way (trees and sand).
