"Based in Oakland, I learned that Truffle Shuffle, founded by a group of French Laundry alums, pivoted from selling truffle products to restaurants to offering weekly live cooking classes nearly a year ago after the pandemic halted their original business model. Their popular classes—ranging from truffle mac and cheese to truffle lobster rolls and a Wild Mushroom Fettuccine Alfredo session ($99)—have driven rapid growth: they've hired 25 new employees (mostly furloughed restaurant workers), appeared on the Kelly Clarkson Show, moved into a new Oakland headquarters, and attracted new investors, one of whom connected them with Snoop Dogg. The classes are high-energy and interactive, teaching fine-dining techniques you can recreate at home; for the fettuccine class they demonstrate how to make pasta by hand and will hold a pasta-rolling competition that Snoop will virtually judge. Kits include all pasta ingredients (with the option to add fresh truffles for an extra cost) and a “Salty Dogg” mixer for Snoop’s signature gin-and-juice using Indoggo Gin; registration has no hard cap (they've had up to 10,000 participants) but kits must be purchased by Thursday morning to ensure delivery, and the competition winner receives bragging rights and a pound of fresh truffles." - Eater
