Uliassi

"The Adriatic Riviera, a picture-postcard summer holiday destination, is the setting for this fine restaurant run by chef Mauro Uliassi. Hidden among the private beach clubs that crowd Senigallia’s seafront, this three-Michelin-starred restaurant comes as a surprise, surrounded as it is by beach parasols and the sound of the sea lapping on the shore. The strength and originality of Uliassi’s cuisine lies in his ability to make good use of local ingredients, taking inspiration from the culinary traditions that have been so familiar and successful along this coastline over the past few decades and giving them a personal, creative twist. Fish and seafood obviously take pride of place, although there’s also room on the menu for meat, inspired by the Marche’s traditional game dishes, so that the sea and the mountains come together in a perfect reflection of the region’s soul. The dining experience here is enhanced by the owners’ warm welcome: Mauro’s sister Catia and his son Filippo work alongside the chef. It’s also worth mentioning that the restaurant is doing its bit for the local environment by banning the use of plastic and doing its utmost to persuade its fish suppliers not to use polystyrene to transport their fish." - Michelin Inspector

MICHELIN Guide Italy 2019 Selection

"Catia and Mauro Uliassi’s eponymous restaurant in Senigallia on Italy’s East Coast is the newest three-starred restaurant for the country. Technique and technology with a tradition in constant movement coexist within the kitchen, and this is fueled by the brothers’ travels and their coastal surroundings. “It is a place full of energy, which is exceptionally beautiful,” says Sergio Lovrinovich, director of the MICHELIN Guide Italy. “Diners are always presented with a memorable experience and unique cuisine, that is well worth making the special journey for, as the three Michelin stars signify.”" - Abbe Baker

The seafood here is phenomenal. The red shrimp and the sole are highlights of the meal for me. Wine list is great. Service is attentive and personable. The restaurant is right on the beach, so there is plenty of people watching to do. I don't know if there is a perfect moment but savoring these delicious seafood bites, sipping some fine Italian bubbles, and having the Mediterranean breeze gently caressing your face come pretty close.

The food was exceptional, but what really stood out was the wine list, extensive, expertly curated, and capable of satisfying even the most discerning wine lovers. The sommelier’s pairings were spot-on, enhancing every course. A must-visit for anyone who values world-class cuisine and an outstanding wine program.

Incredible experience. Never ending dishes just keep coming from the kitchen and wonderful staff. One from our party wasn’t a fan of fish and they quickly realized she wouldn’t have enjoyed some dishes and brought out dishes she would enjoy. Not expected and just over the top service. Sei grande Chef Mauro!

We went for the Classic tasting menu and we loved it, particularly the fish and desserts. The variety and presentation of all dishes were impressive: sole, shrimp and Rimini fest were fantastic although spaghetti vongole was too salty. Service was excellent, except for the sommelier who gave us lengthy explanations on vines and sea winds, but certainly didn’t give us the wine we asked for.

I enjoyed the dinner although was not so impressed by the overall experience. Don’t get me wrong, just my very personal opinion and taste buds. I would still recommend it though. Food is well presented, exceptional quality but some of the pairings did not meet my personal taste. Did not enjoy the ambiance, no air conditioning, it was slightly too warm (it was June) for a starred restaurant; a bit too noisy (I could perfectly hear the conversation of a table far from mine) and the overall atmosphere did not meet my personal taste and expectations. The restrooms are small and you do not feel as being in a starred restaurant. Personnel was kind, but felt quite junior. I had my finished plate left in front of me and taken too slowly: again I am picky just because of the my expectations for a starred restaurant. One last thing that left me surprised: a guest who was dining on a table next to mine was gifted some hand made crackers to take home, but nothing was gifted to me ! Maybe they did not like me ;-) Here is a ranking of the courses, from most enjoyable (I want more) to the least (one is more than enough): come una cassata (dessert); piccola pasticceria (port dessert); sorbetto (pre dessert sorbet); wafer di nocciole (entree); Rimini fest (squid skewers); sogliola (sole); spigola (sea bass); spaghetti (smoked spaghetti with clams) gambero (raw shrimp); ricci (raw sea urchin); seppie (squid with pig belly fat); ossobuco (bone marrow with cod).

One of the best dining experiences I have ever had. We had a 4-hour lunch with beautiful views of the water from our table. The restaurant was airy and full of light. The food was delectable. We did both of the tasting menus that they offered so it was nice to try a little bit of everything. The presentation of each dish was gorgeous and the flavors of each subsequent dish was different from the next. Service was amazing. Very memorable experience and cannot wait to go back one day soon!

Extraordinary. You eat mainly fish, but you can't call it "fish restaurant". Recipes are creative and impossible to describe: do not make a choice, trust the chef. The quality and the creativeness of the food deserve all possible stars. The location is not impressive on its own, but pleasant and appropriate for a nice experience. The staff is young, but well trained and full of enthusiasm.

Google
Highly recommended. We had a great experience with their tasting menu. The menu dishes had a good flow. The flavors were excellently balanced. The dishes, surprisingly, had layers of flavor and ingredients. This is in direct contrast to what you expect from ‘minimal ingredients’ Italian cuisine. Yet it does not take away from the experience, but rather lends to it. The wines were well paired. We opted for the local (regional) wine pairing and it was a great choice. We discovered some local wines which are made from rare grapes that were almost lost! The ambiance was what you expect: comfortable, easy yet sophisticated, and a healthy sea breeze. One minor nag is that the service was not as jovial as can be expected in such a place. The staff were not as excited about their own dishes as they should have been.

Yelp
We took a day trip to Senigallia. At the tourist office, we were informed this little beach city had two Michelin star restaurants. We decided to try our luck at the seafood one. We were able to get a table inside for when they opened at 12:30pm. The outdoors looked lovely. We got the easy classic tasting menu. No regrets. We started with a glass of wine but the pour was so little we ordered a bottle. Tip- buy wine by the bottle. Service was perfect. Absolutely perfect. My favorite was the four gras between two wafers.

Yelp
I live in Brussels and some ten days ago I booked via website a table for two for dinner at Uliassi in Senigallia (Italy) a two-star Michelin restaurant for December 28. I immediately received confirmation and I then purchased the flights from Brussels to Italy and booked the hotel. After no less than one week, I receive an email from Uliassi saying that they are sorry but the restaurant is closed that very day and that yes, Ms. Uliassi did not pay attention when replying to my booking. Also that they tried repeatedly to call but could not reach me because the number I gave them was wrong. When they got my furious email of reply they called immediately apologising - meaning that if they had cared, they could have called well before. I was astonished to listen to their apologies and no offer to compensate me at all. The result is that I have to foot the bill of their carelessness as my programme just sank but the flight and hotel are already paid. I do not know (and will never know) how the food is, but can tell you that such level of service is definitely NOT up to the reputation of a two stars Michelin restaurant: in such an establishment these things simply should not happen.
