"Barton Springs brewery and restaurant Uncle Billy's closed suddenly this month ahead of a move to Dripping Springs, where it will continue to make spirits, canned cocktails, and barbecue, but no more beer." - Tim Forster
"South Austin brewery and restaurant Uncle Billy’s is now closed on 1530 Barton Springs Road. Uncle Billy’s is moving to an undisclosed address in Dripping Springs, with a projected opening date sometime in early 2020. The Dripping Springs location will feature its production line of distilled spirits and canned cocktails, along with a tasting room serving Uncle Billy’s barbecue. However, it has no plans to brew beers in the new facility." - Nadia Chaudhury
"Uncle Billy’s Brewery & Smokehouse and Celis Brewery are hosting beer launch party for its Resilience Butte County Proud IPA on Thursday, December 20. The beers were made with Sierra Nevada Brewing Co. as part of its camp fire relief fund benefitting organizations helping out with the fires in Paradise, California last month." - Nadia Chaudhury
"Barton Springs spot Uncle Billy’s Brewery is adding spirits to its lineup. The goal is to eventually become a brewery and distillery and make its own spirits that would be distilled from a local distillery yet to be named, but barreled and aged at the brewery. To help fund that, Uncle launched a crowdfunding campaign through MicroVentures, seeking to raise $1,000,000. Until it can do that, it has serving booze that it has been processing and adding flavors to already-distilled spirits. Uncle is working with a bourbon whiskey and vodka that are being used for cocktails." - Nadia Chaudhury
