"Understory is a bar in the middle of the Sky Deck food hall where you can drink great cocktails and order dinner from surrounding restaurants right to your table. Soaring ceilings and underwater scenes make for a dramatic backdrop that's a little nicer than your usual food court. We love the VanDam's Vanga, a margarita-paloma hybrid with activated charcoal. "Your cocktail experience will reach new heights when you step into Understory, the cocktail bar nestled within The SkyDeck at Del Mar Highlands Town Center. Named for the dark, still, humid layer of the rainforest found between the canopy and forest floor, Understory recreates this atmosphere with towering, industrial-style metal trees surrounding the bar. The cocktail menu is equally inspired by this setting, with drinks like the clarified Astral Margarita. Here it’s reimagined in a tropical way with banana, strawberry, orange liqueur, and saline salt. "Elevate your cocktail adventure at Understory, the resident cocktail bar inside The SkyDeck at Del Mar Highlands Town Center. The name comes from one of the four layers of a rainforest — the understory is the dark, still, humid area located between the main forest canopy and the forest floor — and is reflected in the tall, industrially-inspired metal trees that surround the bar.
