Uovo is located in a small parking plaza that also has Erewhon and a handful of other small businesses. Parking wasn't too bad on a weekday night around 8:30pm, and the wait was maybe 45 minutes - to the T. The interior is dimly lit but enough to see the dishes and enjoy the fresh tastes dished in front of us.
My friend and I ordered a few items similar to their tasting menu: Yellowtail Crudo, Ragu, and Amatriciana. The Yellowtail Crudo was delicious, with a nice blend of tang, sour, and lightly spiced. Lathered in olive oil, this one was CRISP and went slid down easy.
The Ragu was interesting; I never expected to like what appears to be a "bare" pasta topped with meats. (What did I expected? The description was literally Bolognese without [dairy]...), The beef and pork, though, were sooo flavorful, lightly sweetened with pinches of salt as contrast. The noodles? They were very crisp and as best as I could have wished any noodle cooked.
The Amatriciana boasted a similar profile, though adding in the sweet flavors of tomatoes and hints of spiciness from chili peppers. On top, there was also cheese, which made it a perfect partner for the Ragu.
Returning? Heck yes, better question is when? Throughout the meal, service was amazing, and water was often refilled. The two absolute best parts of dining here:
(1) tip-free restaurant - might be "prebaked" into the price / salary but a relief
(2) cheese wheel - never had the opportunity to order something that uses this... I must next time!
