I haven't had a lot of luck in my visits to Vaquero. First time, their pitmaster was out of town. It wasn't posted on their socials or website that they were closed, but no dice. Second time I came around the holidays for the brisket tamales. I got there early, but they had sold out on day one. Again, no mention on their socials. Today I made it over there for taco Tuesday. I've been wanting to try their cochinita pibil, but their special today was tablitas. I opted to try one of their birria and one campechano.
The tortillas are thick and definitely not store bought. Both tacos have their brisket. The birria was shredded and comes with cheese. It was more cheese than meat. They griddle the tortilla, but not very well. It wasn't crunchy at all. It didn't seem to be flavored in the consume. It was just a brisket taco. The consume is not what you think of when you think birria, but they are not simmering the meat in chillies and spices, so it doesn't taste like that. The campechano was not very warm, impressive sice I got there when they opened and was the second person in line, and I think was supposed to come with a salsa. This was DRY. And frankly pretty skimpy on the meat as well. I've seen pictures of their tacos, they look better than what I got. Again, just another brisket taco. But since the tortillas are on the thicker side, that was what was really coming forward. If they have salsas, they were not out by the time I ate and left.
The brisket was pretty tasty, and just coming for bbq I would say is a better option.
