"Inside Circa's sportsbook, I found a new sports bar opening at the end of the month called Victory Burger & Wings Co., from the owners of American Coney Island at the D Las Vegas, anchoring the three-story screen and featuring its own radio booth. The menu centers on 8-ounce flattop-grilled burgers made from a blend of Black Angus ground beef, short ribs, and brisket that come in six varieties (and can be swapped for turkey, grilled chicken, or an Impossible burger). Highlights include the Vegas Martini burger—a twist on the Midwest olive burger using cream cheese, mayo, chopped olives, and cheddar—the fondue burger (created by co-owner Grace Keros) with creamy blanco cheese over fire-roasted red peppers, artichokes, and tomatoes, the cheddar-and-thick-sliced-bacon Victory, and the Victory Loco topped with fire-roasted corn, poblano, onion, pickled jalapeños, creamy blanco sauce, and sliced avocado; barbecue and classic burgers are also offered.
