"Inside Circa's sportsbook, I found a new sports bar opening at the end of the month called Victory Burger & Wings Co., from the owners of American Coney Island at the D Las Vegas, anchoring the three-story screen and featuring its own radio booth. The menu centers on 8-ounce flattop-grilled burgers made from a blend of Black Angus ground beef, short ribs, and brisket that come in six varieties (and can be swapped for turkey, grilled chicken, or an Impossible burger). Highlights include the Vegas Martini burger—a twist on the Midwest olive burger using cream cheese, mayo, chopped olives, and cheddar—the fondue burger (created by co-owner Grace Keros) with creamy blanco cheese over fire-roasted red peppers, artichokes, and tomatoes, the cheddar-and-thick-sliced-bacon Victory, and the Victory Loco topped with fire-roasted corn, poblano, onion, pickled jalapeños, creamy blanco sauce, and sliced avocado; barbecue and classic burgers are also offered. Jumbo breaded wings come coated in Buffalo, barbecue, garlic Parmesan, or red chili sauces with homemade ranch, bleu cheese, and jalapeño ranch for dipping, while sides include nachos with topping on every chip, sweet breaded onion rings inspired by American Coney Island, fried green beans, and waffle fries (including a sweet potato option) that can be finished with blanco queso and bacon. For milkshakes they forego typical sprinkles and instead stuff shakes with cereals like Cap'n Crunch Berries, Chocolate Cocoa Puffs, and Cinnamon Toast Crunch; the bar will also serve beers with some local options. Ordering is counter-service with the additional option to place orders via iPad from the sportsbook, and co-owner Chris Sotiropoulos says the concept, hatched in 2017, focuses on simple ingredients and a family-style, 'heart and soul' approach to the food." - Susan Stapleton
