I heard about this place from the locals and decided to give it a try. First, let me say that this place closes early, so make sure to plan accordingly. I ordered the full "PORK GUT PACK," which comes with brisket, sausage, cheese, jalapeños, fritos, and other toppings to your liking. The food was decent, I would like more flavor as the meats didn't have that smokey bbq flavor I was looking for. Pretty decent portions what you paid for. All in all, I recommend at least giving this place a try if you're looking for some BBQ.

Julie has done a great job of taking care of business since her dad retired. I've known the family 40+ years. Only complaints are, there's no lighting in the parking lot (dangerous unless you're packing), and the lids to the cups don't stay on. They never have. Basically a spill every time a child handles one of them. Everything else is absolutely perfect. I love eating here. Love the Gut Pak.

I was in Waco for an event and this place was recommended by a co-worker. The place has been in business since 1915 so you know they've been consistently good for a while. I tried a bit of everything and still had enough to bring leftovers for the wifey. One of their signature items is called the "Gut Pack" which comes in a full/half order, I did the 1/2. The pulled pork sandwich was delicious and had a great flavor. The brisket and turkey were both moist and flavorful. The 3 cheese mac and cheese side dish is a must if you're a mac fan. I would definitely recommend this place to anyone visiting the area.

We went here for dinner at around 7pm. They close at 8pm so we went in expecting the meats to be a little dry. When we got there it was really busy. There’s was a line to order but it went by pretty quick. All the tables and booths were taken up luckily one opened up when we were ready to sit. I think this place wants to maximize the amount of people that can dine but all the tables sit 4-8 people or more. Most groups were 2 people so the 2 people would take up an entire booth designed for 6 people or more. I would recommended Viteks to get more 2 people sittings. The food was in fact a little dry but it was still really good. The flavor was great and I know if I return it’ll be during the lunch meal and I can have higher expectations on the freshness. I recommend going early since when we went they were almost running out of brisket, they were out of ribs, and green beans. So the earlier the better. The Mac n cheese was amazing though. Everything tasted great. I feel if I went there at 11am it would easily get 5 stars.

Definitely recommend Vitek’s, it’s a must to put on your list! My wife and I went in she ordered the smoked turkey and I had to have the gut pack and can’t go wrong with ordering pulled pork nachos to share. Everything was really delicious, staff is friendly and work hard on keeping the place clean! Don’t forget to tip them.

It smelled so good inside the store... the fresh BBQ makes your mouth water . Nice outdoor picnic area. It was wonderful go just place an Favor order and deliver it. I most definitely have to come back and try some BBQ though.

Spacious bbq place with versatile menu. I enjoyed the gut pack, potato salad, and mac & cheese. The booths featured charming pieces of Baylor sports memorabilia. The gut pack is a meal-sized take on the traditional Frito pie.

Great customer service, staff knows the menu well and gives great suggestions. We loved that they have half portions if you are watching what you eat or want to try a bit of everything, we got a full order of Nachos with a sub for Brisket instead of pull pork, chose sour cream, Pico de Gallo and beans on the side (for picky eaters), a half order of the gut pak, a turkey sandwich (the pepper on the bark is spicy so watch out for the kids) all delicious and saucy.

We stopped by for a brisket sandwich and Vitek's did not disappoint! We have had the Gut Pak before ands it's awesome. We got the sauce on the side and the sandwich was perfect. The bun was soft and the sliced brisket was heaven! The sweet tea is REALLY sweet. I had to dilute it with the regular tea. I'm craving another brisket sandwich just writing this!

Parking is busy, but spaces available. Great first impression & very easy to order. This restaurant interior is a very nice clean decor with a large brick wall and lots of TVs, but they are tastefully blended into the decor. The food is excellent and unlike anything anywhere. The first time I visited it was just a pick up window and picnic tables. This is incredible and exceptionally reasonable for the amount of food. A must when in Waco.

First - they ran out of sliced brisket. 2- Pepsi products and no Coke. 3- they chop the onions instead of slices. So the chopped beef I got was good but not what i wanted. Hubs said sausage was good too but he also came for sliced brisket. Probably won't be back.

I'm originally from Waco and so much has changed, but thankfully Vitek's Gut Pack is still as delicious as I recall! The box is absolutely filled to brim and will leave you hurting in a good way! We chose to sit outside on their covered patio which also has a fire pit and TVs to enjoy some sports. Definitely check out Vitek's if you're passing through!

Ordered the chopped brisket and hot links the chopped brisket was fatty and covered in a sauce but didn't have any flavor. Very disappointed with the BBQ and the hot link was warm at best and just tasted like a cold hot dog. Environment was amazing and service was great but they couldn't hide the food

Another great meal at Viteks on our way thru Waco. Great food and service. This time I deviated from the gut pal to try the new grilled cheese (cheddar/brisket) and it did not disappoint. Highly recommend, they are consistent with their bbq and service and are family owned.

This was my first time to Waco and I was told to try out Viteks. It did not disappoint. Probably the best BBQ I've ever had honestly. I would recommend getting the full size gut pack and sharing with a buddy. Fritos under the meat hit the spot-- would say it's a nice balance of flavor and texture with the crunchy chip bottom. Delicious and a perfect portion size. Will definitely come back the next time I'm in town!

My boyfriend had heard of this place and we decided to go here. The BBQ was AWESOME! It was sooo good. Very tender and the spud I got wasn't dry at all! My boyfriends nachos were also the sh*t!! The workers were also very nice even though we went close to closing time. To add to the cake, the food came out within 5 mins!! I love this place, definitely going back.

I don't know why they call it a market because the only thing "market" about it is that they sell loaves of bread & small bags of chips. Place is clean with a Texas flair atmosphere. You order at the front counter and take a seat and they bring your food out to you. I ordered the GutPak which is bbq beef , chili/ stew ish yumminess, cheese, jalapeño, pickles on the side and your choice of a second meat they mix in-all piled on top of Fritos. and of course it's served with 2 slices of bread. They offer it in half size or full size and both are way more than 1 person could eat. I shared a full size & we couldn't finish it. It was good, only complaint may be to add more frites.

Someone recommended for me to try this Waco staple and it didn't disappoint. Started off with the banana pudding because life is too short to eat dessert last, and it was a solid pudding, nothing fancy, but good. The half gut pack is their popular go to and the best way to describe this is a Bbq frito pie, and a delicious one at that, it comes with chopped beef, which was tender and moist, very authentic to Texas style bbq peppery, and paired great with the beans and your choice of sausage on top of a bed of Fritos and cheese. I got mine without onions and bread and on the side it came with pickles and pickled jalapeños. It also was dressed with their house sauce which paired nicely with the savory flavors of the bbq. The atmosphere was great and it took next to no time to get my food and the cashier was helpful helping me with my selection. My only wish is that they would have provided a bit more cheese and a sausage, I may have found 3 small chunks hiding and they were barely noticeable, but overall this was great tasting food and worth getting out for a taste.

Go for the meats. We absolutely loved the pulled pork, brisket, and turkey. For sides, we had mac & cheese, a salad, and beans. They were decent, but not nearly as good as the meats. The servers that helped us at the counter were fantastic.

It was good going back to a local favorite. We had the a half order of the gut pack with a side of sausage. The gut pack was good as usual but the sausage just about killed me. I belched it all day. Not sure if it was the ingredients or it's freshness. It was good when I ate it but it didn't like me. I would still go back for the gut pack though. The indoor eating area is so nice and the outdoor area is very impressive. They've come a long way since the old meat market I remember.

I have not been here in....maybe 10 years. I had a full spud with pulled pork with all the fixings. Beans, onions, cheese, sour cream. It was huge and heavy. Close to $15 with water. Not bad. Had a nice conversation with one of the servers. Nice guy. Clean establishment. Definitely you should stop here for good bbq. I fore see myself stopping off here again in the future as I pass through Wacko. Argh...Baby Bears!

I enjoyed Vitek's. Easy small menu but enough to find something for everyone. I appreciated that there's more then just BBQ. The nachos looked amazing!!! They also had some frito pie situation that's looked good. I got a brisket potato and it was sooo good! Half is definitely all you need but if you want to be stuffed go with the large. It's A LOT of food and very good!

Wow. Tried multiple places in the Waco area and they all missed the mark. Vitak's is the only place I would recommend. Unless you are willing to drive to Seguin to get Burnt Bean BBQ. Again love BBQ joints this one is top 5% on my list

The turkey was very dry, the beans was tasteless, and the brisket & sausage was just okay. My meal wasn't impressive or even great. On the other hand, my wife's meal was very good. She got the Gut Pak, which is brisket, pulled pork, sausage, cheese, beans, and Frito chips all mixed together. So, here's a tip...get their Gut Pak. This is what they're known for. Each meat on its own was just average. Their BBQ mixed together with Frito chips was delicious.

BBQ FOR DAYS!!! What a cool spot. The industrial warehouse interior makes it rustic and cool kind of like an old firehouse or garage. Really like the extra touches of making it feel like a casual communal space without being crowded between seats. It's just enough noise without feeling like you're yelling over each other if that makes sense. There's also outside dining with TV, bench seating and heat lamps for the cooler days. I ordered the standard 2 meat option with sides. The brisket slightly fatty, jalapeño sausage, the mac and cheese and potato salad. Can't go wrong with any of the other choices. Glad I tried this place. If you're in Waco or driving through I definitely recommend stopping by. Solid place. Cheers! XO

We had our food within 5 minutes after placing our order, and it was great. The mac and cheese is outstanding. The chopped brisket was delicious. My husband and I had a chopped brisket sandwich. Their chopped brisket is like none I've ever had before. There were big bite size chunks of meat, not shredded meat like at most bbq restaurants. The bbq sauce added to the sandwich was delicious...I only wish I had ordered it on a bun because it was so loaded that the sandwich fell apart. However, the bread was nice and soft, so I really didn't mind that it was a little messy.

Been coming here since I was a young lad and wow how it's changed over the years. It's 10 times bigger, cleaner, and just nicer. But what hasn't changed is the legendary BBQ. If you're super-duper hungry try Vitek's version of frito pie, the GUT PACK will have you in a food coma in no time. It's 2 lbs of brisket, sausage, cheese, beans, fritos, and all the fixins! If you're counting calories it might be a good idea to get the half order. Or grab a bbq sandwich on Hawaiian bread.

Stopped in on the way home from a quick trip to D/FW. Missed the lunch crowd so no wait - bonus! Placed our order and by the time we walked around to pay, our plates were ready. Awesome location and interior. Plenty of parking and indoor/outdoor seating. Beer and wine. Average prices for CENTEX Q. We opted for sandwiches. Turkey for me and brisket for my partner in crime. The turkey was tender, with great smoke flavor, but a little dry. Needed sauce (which was a little sweet). Brisket was tasty! Lots of beef and smoke flavor, tender and moist. No sauce required. Three cheese mac was awesome! A meal in itself! Beans were blah, slaw was sweet, potato salad uninspired. We'll be back to sample more of their meat. And that MAC!

The ribs were good. About as good as Rudy's. But not over the top. Same goes for the chicken. The beans had no flavor and the coleslaw was ordinary. The reason why I'm giving it four stars and not 3 1/2 stars is that the employees were extremely polite and appreciative of our business. I was expecting more.

Food portions are large for one person but not large enough to share. The BBQ Brisket is always cooked to perfection. Flavor is amazing. The place is always busy with college students. Baylor University is close by. Most servers seem to be college students working their way through college. They are always helpful and friendly. Makes for great dining experience. It is a great local restaurant.

Vitek's BBQ Ordered the following: Vitek's Famous Gut Pak which consists of Piled on Fritos corn chips, cheese, chopped beef, beans, sausage, bread, pickles, onions, jalapeno peppers, BBQ sauce & sliced bread. I am an old fashion fan of Fritos and especially with the old Frito Pie, so this takes it to another step. The combination of everything really makes it work. The locals really recommend this place and it was nice. Would like to come back and try other items.

Overall it's just ok, but the gut (or spud) pack is worth the visit. Homemade sausage is sufficient in these, but I'm not convinced you'd really notice the difference. They offer a half gut pack, and unless you're really hungry or splitting, this is probably the way to go. Brisket isn't anything to write home about, even to the point where Victoria would skip this in her spud pack. Ribs are very take 'em or leave 'em.

Delicious BBQ right off the highway in a really nice building with an easy to order at counter. Had a bit of a wait in line but was then served up so incredible BBQ on a silver pizza tray. Seat yourself and dig in. Everything was flavored well and well made.

It was an epic, though not long road trip, from Austin to Dallas. It was my dream to stop and eat some great BBQ off the highway en route somewhere in a smaller Texas town. So Vitek's in Waco looked to be a solid choice, and boy was I impressed! They don't do a huge selection of barbecue, they do a few things and they do it FAST and right. It appears that if you want a messier, hands-on type of meal that tours a bunch of what they make - then the "gut pack" and pulled pork nachos are top choices. I actually wanted a neater, cleaner meal where I could relish and savor some of the best meats they have to offer with a couple of sides that would complement them. So, I chose a 2 meat plate with sliced beef brisket and jalapeno sausage. The premium cut brisket was expertly cooked with the right layer of fat and charred perfectly. It was not very melt in your mouth like some may like, there was a chew to it, but definitely not overly chewy. Right in the middle on texture which is A-OK with me at this speed and price point. The jalapeno sausage had great flavor, not too spicy, and the meat was succulent. Really high quality. Usually I am not too impressed by BBQ sausage but this was smoky, peppery deliciousness. Each meat gives you about a 1/4 lb pre-cooked, so a hungry man would definitely want a 2 meat plate, and keep in mind you can mix or match the meats. My sides choices were refreshingly cold potato salad and beans. I highly considered the mac & cheese, but I think the tangy sweet meets spice of the beans offsets the potato salad nicely (compared to mac and potato salad both being creamy). I love that there is a good cold, cheap beer selection which is pretty cool considering it's practically counter service. So you could have ordered, paid and be sitting down with your BBQ and a beer within mere minutes. Amazing. My Coors Light was only $3! The inside has a charming decor too. My only complaint is the bread they give here is very basic sliced bread. I yearned for cornbread, Texas toast, a biscuit, or even a dinner roll like King's Hawaiian. I only eat carbs when they are worth it, so I tossed my bread sadly. I have to say for really quick counter service BBQ right off the highway between Austin and Dallas - this is a must for travelers that want great BBQ at faster than fast food speeds and a much lower price tag than a sit down restaurant. Awesome taste, simple menu, meets great value. I highly recommend this place and give it two thumbs up!

Yummy! We came here during a homecoming weekend and it was PACKED. The parking wasn't that big of an issue. Inside it looked like a warehouse with stone walls and metal beams. Once you're inside, you've gotta get inline to place your order then find a seat. Seating was full because it was cold outside but we found one. Once your order is ready you get buzzed and then pick up your food from the counter. We got the gut pack and it was GOOD. It was a pile of stuff from brisket to beans to cheese to chips. Perfect for 2-3 people. I'd love to go back and try their chicken and ribs.

Layers of brisket, beans, cheese, sausage (or whatever meat you choose), onions, jalapeños...all in a tidy little basket and not at all skimpy on the portions. I can barely finish a small one. Vitek's was discovered by accident when my husband and I were heading south to Austin. What an amazing find! We now stop here regularly anytime we travel in that direction. The meats are perfectly smoked, juicy and delicious, and the ribs are to die for! Excellent sauce too! My only disappointment with this place is the hours that it keeps. Many are the times we have been on the road salivating at the thought of Vitek's rewarding us on our way to or from Austin to DFW, only to find they are closed. Heart breaking!! Check their hours before you go, but GO!! Amazin

First time to a Vitek's. Referred there by the guide at the Texas Rangers Museum. Solid choice for Texas BBQ. The burnt ends were good with a nice flavor. No sauce need. The Jalapeño Sausage had a good underlying flavor of the pepper without being overly spicy. My daughter and I throughly enjoyed the 3 Cheese Mac. Top line. Potato salad was also good. Super friendly staff. The facility from front counter, through the dining area, restrooms, to the patio were extremely clean and well maintained. Personal drawbacks: Sauce was different from what I am accustomed to. Still good and enhances the sausage. The beans had a flavor a little too much possibly paprika in them for my taste. The onions that came with the meal were diced and difficult to stab with a plastic fork. Rough chopped or rings would have been more convenient and easier to handle. Plastic forks and styrofoam boxes are fine for takeout but not for dining in. I would prefer having the meat served on butcher paper and the sides in paper boats. Simple and cost effective for the bottom line plus environmentally more friendly. Overall, a good example of a Texas BBQ and worth a visit.
