Upon entering the tea house, my wife and I were greeted warmly by the owner Wayne. After a brief discussion of how I tripped across gong fu on YouTube and became obsessed with the practice, Wayne selected a white, Oolong, and Black tea to taste and introduced us to Amy. She was very knowledgeable, and we had great discussions of how the teas were changing with each steep and how the materials of the vessels can impact the flavor profiles. It was amazing how tea varietals that we enjoyed already with honey and condensed milk could taste naturally sweet and savory without those added ingredients. It was great to learn the close connections Wayne and Amy have to the family farms that provide the outstanding teas. It is not only a relaxing experience, but it is also a great way to hold conversations with complete strangers over a common interest in something as simple (yet complex) as tea. For our whole lives we were unaware of the potential in the loose teas we were buying, and we were also wasting leaves that could still offer many more cups and joy. Well, that won't happen anymore!!
After our session, Wayne was great in helping us navigate how we wanted to start our journey at home. We selected an elegant Gong Fu set that will be with us forever. We also added a clay pot that I am seasoning tonight with Golden Eyebrow and a clear sharing pitcher. We love to see the changes in color with each steep. We are already talking about the next time we go back and what new teas we may discover. I am looking forward to tasting Pu'er for real (the only time I have tried it was in a tea bag) and I am sure it doesn't do it justice.
