Video: Making Andouille Sausage for a Crawfish Boil in New Orleans | Eater

"A LaPlace smokehouse where the owners teach traditional andouille production rooted in a local tradition dating to French settlers in the 1700s. Their andouille is made from lean, coarsely ground pork stuffed into beef casing (rather than hog casing), then heavily smoked for 12–14 hours; that long smoking time is the dominant flavor and is what distinguishes it from other sausages. The finished sausage is designed to hold up to and complement classic Southern fare—corn, potatoes, and fish—and is particularly suited to a traditional crawfish boil." - Terri Ciccone

Google
Best catfish and gumbo I’ve ever had in my life! Not gonna be able to enjoy that anywhere else now. Even the bread and sides are top tier. You haven’t been to La Place if you haven’t been here.

Google
The food here is delicious every time we come. Today we had red beans and rice with cracklin cornbread…outstanding. Another suggestion is the brisket sandwich with a side of red beans. Whatever you get, you are sure to enjoy it. Although you have to order at the counter, the service is impeccable, so don’t sweat the small stuff.

Google
We stopped here because it has good reviews on Google. When you walk in, you order at the counter and they bring it to your table. I had the special which was butter beans with shrimp, a piece of catfish and French bread. We had the headcheese appetizer, and my husband had gumbo. This was our first time trying head cheese. We both enjoyed it. It had a great flavor and texture. The gumbo and butter beans were very flavorful. The catfish was excellent, light breading and a light flavor. We would recommend this smokehouse and come back.

Google
Had the Panéed Pork Loin special and it was absolutely AMAZING! While you’re there make sure to pick up the owner’s cookbook that’s on display!!!

Google
The smocked sausage is some of the best I've ever had. Person working was very helpful and packaged everything up for my road trip back. I saw it on YouTube years ago and it was 100% worth the detour.

Google
I ordered the Brisket sandwich and potato salad and I was disappointed. The brisket is thinly sliced, but I had fat on mine. The flavor was there. It has a great smoke ring, too. The potato salad tasted more like mashed potatoes. Bbq sauce is not good. I would not recommend this food. Perhaps the other options might be better.

Google
I will be honest and say that my favorite thing from here was the salad dressing and the gumbo.. However the smoked meat didn’t really impress me for how expensive it was.. It was almost like it had to much of the smoke flavor, to the point of giving me a bad case of acid reflux for 2 days.. as well as being just a little on the dry side. And all together we spent a little over $50 for 2 people to eat. We ordered the smokehouse plater and the fried fish plater and a cup of gumbo.

Google
What a great place for good food and good service! You can never go wrong with any of the smoked meats. And the daily specials are always a home run.

Yelp
For a real LaPlace experience this is the place to go. Walk in and there are all the plant workers in jump suits. The rooms decorated LaPlace style (if there is such a thing). Wonderful. I had the andouille chips and the andouille burger. Both were amazing taste sensations. The system of one waitress for the entire room where she takes the order at the desk and brings it out...it's too much for one person. The difference was she was very nice. The other worker who was supposed to help her didn't seem to be doing much but she was nice too. She could have helped out a lot more. She was just sitting there while folks needed refills and such. But I would still give it a five star because the food was stellar, people were nice and there seems to be no better place for a real LaPlace experience.

Yelp
They have good quality food. It doesn't take long to get to your house. I'm gonna order again.

Yelp
Really great food with a strong smokey taste. Hogsheads cheese was good. The red beans were excellent. Service and ambiance were excellent.

Chad O.

Yelp
Their smoked meats are excellent! Great for gumbo, jambalaya and pastalaya. Very friendly people. Sometimes they even have samples for you to try.

Yelp
Listen yall.... we NEVER find food in La Place THIS GOOD. They make baked beans.. TRY THEM. They aren't your average baked beans. I was blown away by the explosion of flavor that smacked my lips when my wife gave me a bite. Gumbo is off the charts. They also sell their own hot sauce in house as well as other things like smoked sausages and spices. Definitely a hole in the wall that I'm glad we gave a try. We will be back!

Yelp
Second time I've been to this restaurant. I had good memory the first time, but this time not so much. The place is decent overall, decoration, dining area size, menu items, etc. but I did not get the feeling of great BBQ with any of the menu items. I ordered beef brisket and it came thin like bacon and not as juicy as one would like. BBQ sauce is thick and tangy. Also the potato salad had lots of garlic!. Salad was good too, fresh and cut into small pieces. Overall, the food was average good.

Yelp
I am no expert when it comes to St. John Parish. In fact, I know very little about this parish named after my patron saint. Not knowing much has never stopped me before, so now that I occasionally work in this area, I decided to explore the restaurants. Did you know that this part of the world claims to be the andouille Capitol of the world? I probably missed that fun fact in geography class, but people out there are proud of that. Wayne Jacobs Smokehouse is one of the most well known smokehouses in LaPlace so I figured that was a good place to start. The drive here was very familiar. If you've ever driven around south Louisiana, it will feel familiar to you too. The building itself does not look fancy, but trust me when I say, it's worth a stop. There was ample parking and an entrance on the side and in the front. Service was very friendly and I was treated like a local despite being an obvious outsider. The menu is pretty extensive and I decided I wanted to sample a few things. Here's what I ordered: Chicken and andouille gumbo - Whoa nah! I ordered a cup so it wasn't much, but wowza did it pack some flavor. That andouille added a smokiness not always found in regular sausage gumbo. It was very good. The addition of Tabasco made it even better. Hog head cheese - They didn't have any of the hot so I ordered the regular. It was the chunkiest, most interesting hog head cheese I've ever had. It came with crackers, but those were unnecessary. It also came with a bowl, yes a bowl, of hot sauce that was necessary. Each bite got dipped and coated and was made even better. Sausage of the day sampler - When I went the sausage was a turkey sausage served with yellow, and creole mustard. It was decent, but because it was turkey, it was missing that deep smoky flavor and andouille would have. I wouldn't order turkey sausage again. In closing, Wayne Jacobs Smokehouse is worth a try. My one regret is that I didn't bring an ice chest to work. If I had one I would be eating my own version of andouille gumbo right now.

Yelp
Good stuff all around. No bad choices on the menu. The spicy stuff is a bit heavy on the red pepper, but it's all good. The barbecue sauce (served on the side, thankfully) is sweet and slightly smoky. The smoked chicken is spicy and heavily smoked. The ribs are spicy and sticky - my co-worker declared them the best ribs he'd ever had. The brisket is lean and tender, with a slightly sweet taste (almost as if the barbecue sauce were cooked into it). The paneed pork loin (Wednesday special) is very good - and huge. Plate sized. Definitely a big lunch. The potato salad is chunky, solid (but tender) pieces of potato, with just enough mayonnaise (not overly dressed), and a good flavor (no red pepper spice here). The spicy, smoked hog's head cheese appetizer is just perfect (not too chunky, no globs of gelatin), and the caramelized onion sausage (the current sausage of the month selection) is very good (again, not too spicy). Clearly, there were leftovers. I'll be having most of this for dinner tonight. It is certainly good enough to to eat twice in one day. I was hoping to substitute andouille for smoked sausage in a po-boy, but they were (sadly) out of andouille for that. But they did say they'd be happy to do that. Next time. And I will be back. Five stars - this is good enough to drive 20 miles out of your way.

Yelp
Went by on a Saturday to eat, but to my surprise they were close. Got there within the open hours only to be told of the situation. The nice lady did stop what she was doing and allowed us to purchase a few items. They were veré tasty. Would love to experience the full dining

Yelp
This was a quaint little spot. Great atmosphere and even better food. I had the Barnyard Andouille burger. The burger was packed with flavor. It was superbly succulent.

Yelp
The food here was fantastic and the service was great also. The sandwiches were fantastic. We will definitely go back when we are in the area.

Yelp
I ordered product from these guys when the hurricane went through their town last year. I ordered Tasso and I ordered andouille and I ordered smoked sausage I think it was about 2 pounds each. Well it took some time to get the product because they had to rebuild and they kept me notified they said hey if you want a refund we can refund it but I'm like no absolutely not I wanna try your product. Well let me tell you folks yesterday I made dirty rice with their smoked sausage and it was unbelievable the best smoked sausage I ever had in my life and I am 67 and I was a chef for 30 years these guys absolutely rock. I cannot wait to try the andouille sausage and also the Tasso ham I look forward to ordering much more products from these guys great service phenomenal product I highly recommend these guys to anybody.

Yelp
My favorite andouille to throw in our crawfish boil. Young girl working behind the counter was very polite.

Yelp
I'm just going to say it. No one makes better andouille and Tasso than Wayne Jacobs Smokehouse. Everything they do here is superb. I discovered their smoked meats at a SoFab event a couple of years ago and haven't looked back once. Because, once you taste the best, the rest is just...well, the rest. I have nothing more to say, because it would just be gilding the lily. If you don't get that reference, you're too young. Look it up. Always, always going back.

Yelp
This place is great! We found it after a swamp tour! Got to try the Boudin Balls pronounced boo-dan balls. Delicious! Good service as well. Hope to return one day :)

Yelp
UPDATE: Has to drop to 3 stars. Drove from COLORADO specifically for the Jambalaya only to be told by our server that it was no longer being served. She said it was always a "hit or miss" and she didn't care for it. So we got the Friday special of butter beans with shrimp and topped with catfish. Really good. Got an order of red beans. Really good. Got the smokehouse platter. Not very good. The ribs were tough. The sausage was dried out. The brisket was nothing special. The chicken was dry. Am I the only one that misses the Jambalaya?? 5 stars just for the Jambalaya! I flew in from COLORADO to pick up Andouille from Jacobs (because it's cheaper to fly in and pick up than for them to deliver!) and heard this place was good. I was heading to Middendorfs but had to squeeze this in and glad I did! I got the Jambalaya to go and finished before I got by on the highway. It it is the best I've ever had and I make a pretty good jam. It's the Cajun version so no tomatoes yay! It was perfectly spicy and the pork, sausage, Andouille ratio was excellent! Wish I was in town longer so I could have tried everything else. (And another portion of Jambalaya!) I will be back.

Yelp
In short, I would eat here again. The first thing I thought when walking in was that its too nice looking to be a smokehouse. No wood plank floors, no paneling on the walls, no choking smoke lingering in the air. I may have been that way in the past (?) but now its like a cafe looking restaurant. The servers were quick to get us drinks and take orders. Friendly too even though we both were obviously from out of town. First to come up was a sweet potato andouille sausage soup. That was rolling!! Im getting a bowl next time. My healthy coworker opted for a grilled shrimp salad. The shrimp was a nice size and the greens and such looked fresh and yummy even for a guy like myself. I chose the mushroom swiss burger. Came out on a try and a presentation very similar to Company Burger, but didnt taste as good. Still good, just not heartattck good. The sweet tea was just right too. The bill I think was kinda steep. $44 for lunch for 2. Its ok, I can expense it but I had a table full of food and drinks the following night back home for less. There is a cooler with prepackaged smoked meats too. I couldnt get anything since I wasnt going back home right away but maybe next trip I will bring home some andouille. In short, I will eat here again.

Yelp
Wonderful local flavor, great selection, take some of their fabulous offerings home with you. Don't pass this place up!

Yelp
Thank goodness for this place. I'm stuck in La Place working, and was dreading having to eat lunch at either fast food places, or chain restaurants. This place is off the beaten path, in a residential neighborhood, and you as soon as I got out of the car, I knew we'd be in for a real treat. Everything was really good. You have to consider the locale. You're 30 minutes outside of New Orleans, and while Wayne Jacobs could do well in New Orleans, I'm glad it's in La Place... so that La Placians know that restaurants can serve really good food.
google avatar

Kyle G.

Yelp
Best bread pudding I've had in my life! Great flavor but not overly rich/sweet. Ordered the blackened redfish salad with the house dressing, let's just say that I've never seen nor ate such a fresh and well dressed salad ever in my life!!! Also ordered the brisket meal and the meat was absolutely the best...tender and flavorful with an excellent Barbecue sauce to top it off.
google avatar

Andrew B.

Yelp
Best andouille in the world. My mom brings me some when she visits or has it shipped to me for holidays or just when she knows I am planning a gumbo in the near future. Their tasso is great, too.
google avatar

Ryan S.

Yelp
Well-known for it's andouille, Wayne Jacob's is a local institution. Traditional cajun dishes are the order of the day, boasting most of the typical favorites with all the typical flavors. Being a smokehouse, obviously the fare is largely based on house smoked and cured meats and sausages with a bit of a spicy bite. The dining room is casual cafe-style with rustic cajun decor. I don't recommend the andouille chips unless you are a fan of crispy, over-cooked bacon. Overall, the meals are fairly simple and traditional in terms of seasoning and quality. Daily lunch specials are a plus. Definitely worthwhile for everyday dining. Decor: 18 / 30 Service: 19 / 30 Food: 19 / 30

Yelp
This is a unique little place in Laplace that you certainly wouldn't expect to find. It's a smokehouse and a restaurant on the side of the road. You'd never think it! We came for Sunday brunch, which is a smaller menu than usual, but still offers a great variety. I got the French Quarter Pancakes. Seriously, who can pass up a banana/pecan pancake with Bourbon Pecan Praline sauce? It was delish, though got a little too sweet at the end. Maybe if served with some of their awesome bacon, it'd be perfect. We also got the Cochon Du Lait Benedict, which used some bacon from the smokehouse (I'm drooling just thinking about it!) and pulled pork on the traditional Benedict style dish. That one won. Now onto the smokehouse! We walked out with so much fun stuff. Andouille from the Andouille Capital of the World, Laplace, which was very good in our red beans, boudin which was also a hit, some fresh red beans (great!) and some more of the bacon for the house. All reasonably priced and made fresh there. Worth the trip just for the fresh meat!

Yelp
Consistently great food & service!! We love Clair!!! Food is perfect and the bread pudding is AMAZING!
google avatar

Eddie M.

Yelp
You can't lose at this place, except when it isn't open, and that's where a phone call before you go to shop or dine in is a must. When it is open, the selection of smoked and prepared meats and seafood is super! Dining is a bit pricey for a rural restaurant, but they deliver on the flavor. Bring a cooler (or a Cajun microwave, as y'all know, yeah). You're gonna want to take some of that home with you!
google avatar

Caroline M.

Yelp
We live in Wisconsin and love the flavors of Louisiana cooking. We have not had the opportunity to visit this restaurant but I have ordered items shipped to us up north. This past shipment arrived and many packages had busted open and spilt ingredients inside the box, making them not viable as gifts or specific food to be cooked. I emailed the establishment and received a prompt response asking what was damaged so they could replace the product and anything else they could do. I asked for some seasonings that I could use with the mixed up beans so they could be salvaged. Wayne Jacobs not only sent replacement for damaged packages and the requested seasonings, also included a package of Tasso Ham and sausage for flavor. Any business that goes the extra step as Wayne Jacobs did here is top notch in my book. I will definitely be shopping their online store again.
google avatar

Jay L.

Yelp
Good food but the service staff could use an attitude adjustment. My supervisor went into the restaurant later that day and had the same experience. Won't be returning...
google avatar

Jennifer G.

Yelp
Wayne Jacob's is a real deal smokehouse. The menu is a great mix of smoked items done in different ways. From the smoked chicken, to the gumbo, to the andouille chips, everything is tasty. Service is always friendly and efficient. This is a great stop if you are headed out to the plantations.
google avatar

Marc G.

Yelp
Ok people you need to find this place. This smell alone as you walk through the door tells you it's going to be good. The cane syrup bourbon milk punch is a desert in a glass. Don't drive by stop!
google avatar

Shebba S.

Yelp
I come to this place at least once a week and have not been disappointed yet. My husband and I actually found their booth at the Andouille fest and were excited to have their andouille Corn dogs. Their doughnut bread pudding is to die doe and their andouille Bacon on their Brunch menu is really good. And not to mention the fresh and homemade goodies you can pick up as well. Will always be in our top 10 hidden gems.
google avatar

Charlotte K.

Yelp
This place never disappoints! Brunch was superb! The bourbon milk punch, deviled egg appetizer, boudin Benedict, and Tasso eggs were delicious! We have been here several times before for lunch, but Sunday brunch is now my favorite!
google avatar

Earl J.

Yelp
Very very good. Small dining room but packed. Great smoked foods. I had the andouille burger. Mmmmm good. Getting to go some hog head cheese, andouille and Tasso. This place is in Laplace. Great small road trip
google avatar

John O.

Yelp
Do not be fooled by the name and think this is just a BBQ joint, this place by far is the best restauruant in LaPlace and compares favorably to the best in New Orleans. Open for Dinner only on Thursdays and Friday nights, lunch Mon-Sat, and a fantastic brunch comparable to brennans on Sunday. The Chef is inventive and the menu changes to some extent daily. Worth the trip if you are not in Laplace, and if you are in Laplace, why haven't you already tried the place yet?
google avatar

P G.

Yelp
Ok first things first.... When you arrive there is a front door but go to the side door. When we entered the front door you will get the cold stare-down from the locals. It was like a scene in a movie. The local cop and the local hunters, etc. Just staring us out of towers down. Ok back to the food thing. We started with the Hogs Head Cheese and Boudin Balls. All was good with that. For our entrée we both have a bowl of gumbo, the chicken and andouille sausage. It was really good. Great little small town restaurant. Will be back.
google avatar

Stefano M.

Yelp
Arrived just in time before the kitchen closed and still I got several plates of meat very well cooked and delicious. If you go for a plantation tour you should definitely stop by here for lunch
google avatar

Crystal H.

Yelp
This is one of my family's favorite places to eat. I had boudin balls for the first time and they are by far the best anywhere. The andouille and brisket are my favorites. Also like that they always have different specials every week. I have tried so many different things here and have never had a complaint about anything we have gotten. Definitely worth a try you won't be sorry.
google avatar

Perri V.

Yelp
Back for Brunch! This seems to be a regular stop on my visits, although I wasn't too happy on this visit. Two of us ordered the BBQ Shrimp with Grit Cake. I was not impressed. The sauce the shrimp are cooked in tasted like pure Worcestershire, and then it is poured all over your grit cake. It was so overpowering. That recipe needs a lot of help. I would not order it again. My dad ordered his "old faithful" Crab Cake Benedict. It was good, as always. Due to the lack of any good restaurants in LaPlace that cook fresh food, I would definitely be back, just wouldn't order the shrimp and grits again. Their crazy hours, drive me crazy!
google avatar

Hayley M.

Yelp
Awesome food! Awesome product, and a great family who are all very nice and a great benefit to the Parish always helpful highly recommend
google avatar

Tom H.

Yelp
Best andouille on the planet and their "chips" presentation of it is worth a mention. All of the smoked meats are fabulous as are the red beans and the jambalaya. They are pretty creative with salads and sandwiches too and their lunch special menu always present difficult choices of interesting, different, and unique dishes.
google avatar

Tom O.

Yelp
Very good food. So glad we pulled of the I10 and stopped in. Everyone was friendly and helpful. I picked up two logs of Andouille Sausage for and delightful treat next week's dinner. Lots of unique meats to bring home for later. I was suggested you stop in and enjoy the experience of this small town Cafe.
google avatar

Brian B.

Yelp
Great food, great service, and once you are done eating, you can buy some smoked products they make in-house. My wife and I stopped in for a late lunch, about thirty minutes before closing and had a terrific lunch. No one hounded us for coming in late and the server answered any question we had and was always close by to refill drinks.
google avatar

Mike H.

Yelp
Ordered a platter to get a little of everything. All of the meat was terrible. Ribs were dry with hardly any meat on the 3 bones. 6 or 7 very thin slices of over-seasoned and extremely salty brisket(tasted like nothing but Tony Chachere's seasoning and chili powder). A pathetic little leg quarter. 3 inch piece of smoked sausage sliced in half that was as dry as a piece of beef jerky. Very thin, almost burnt fries. This place is a joke. Never eating here again.
google avatar

Gwen G.

Yelp
I had the casserole and it was delicious!! The onions were so sweet. My husband had the steak burger and it was soooo good. Juices ran out if it. He said it was the best.
google avatar

Scott J.

Yelp
A good local restaurant. Limited menu, but interesting. Lunch was busy and loud, but that was ok. However, it took along time for our food to arrive and it was slightly above average. I would eat there again, but have lower expectations.

La Tanya D.

Yelp
My family and I have been customers over 10 years (VACATION YEARLY)The packaging has changed since my last purchase and the quality as you can see from the pictures are pieces, no cracklins just fat, crumbs.... NOT of the standard in past visits. Called TWO DAYS to express my concerns and received a call from one of the owners that didn't take into consideration the fact we been customers for over 10 years. WOW Couldn't add the pictures La Tanya

Yelp
Found this place because of Yelp. My local favorite Bulls Corner had closed and I needed a local replacement. WJ's is more than up to the task! Both me andy co-worker had the strip and it was excellent. Medium rare was actually medium rare and did not need any flavor enhancers, not even salt. The cheesecake eclair desert was excellent as well. I will be sure to come back on my next trip down.

Belinda L.

Yelp
Best kept secret in LaPlace. No need to travel to New Orleans for Sunday brunch anymore to have an over priced meal. They have a standard menu and a special menu that changes every Sunday. The buttermilk pancakes with Steins syrup is a must have. The shrimp and grits are amazing and so are the omelets. I am never disappointed when eat here. You always feel welcome when you walk in by being greeted with a smile. The waitresses make you feel that you are walking into their home. Love, love Wayne Jacobs.
google avatar

David W.

Yelp
First of all, their andouille is the best on the planet. You can only get authentic andouille in LaPlace and this is the best. The andouille chips appetizer is delicious, reminds me of pepperoni only mo' bettah. They have daily specials for lunch and we had shrimp & redfish couvillion, very good Ended with banana beignets with caramel sauce. Top notch
google avatar

Ashley F.

Yelp
Super yummy! The brisket was a little too salty for me personally but great quality! If you're in the St.John area this is the place to try!
