Such was the case on a recent Saturday, where a companion and I found ourselves at a packed Westway Diner — with a line snaking out the door. I can’t say whether my fine hash ($14.09) was better or worse than other versions I’ve sampled, but what I liked was how the short order cooks placed my eggs directly over the coarsely chopped, reddish-mixture, so that every bite resulted in equal parts oozy yolk, silky potato, and salty cured beef. It was a study in soft breakfast textures, nothing more al dente than oatmeal.
