"About 20 minutes outside of Bend, Wild Rye sits atop the hill at Brasada Ranch Resort with a refined dining experience and an immaculate view of sunsets over the cascades. Chef Karl Holl takes inspiration from the surrounding high desert. His signature juniper braised lamb over rye berry risotto perfectly reflects the desert. He starts by crushing whole juniper branches with garlic, shallots, bay leaf, and other aromatics, which is rubbed into a cut of loin and shoulder to cure. Many dishes are torched or charred (rather than barbecued). Don’t miss the sumptuous smokey rolls topped with a pile of juniper salt. Holl’s creativity shines in the roasted beets and smoked yogurt with seasonal citrus, basil, lime leaf, and pistachio rose rubble that’s best eaten when mixed and distributed throughout the salad. Chef Karl Holl Reinterprets High Desert Cuisine at Brasada Ranch’s Wild Rye | Eater Portland

"Opening June 20 at 16986 SW Brasada Ranch Road, I see Wild Rye as Chef Karl Holl’s ambitious reimagining of Brasada Ranch’s flagship dining: a season-driven, high-desert–informed restaurant that leans into smoke, char and foraged flavors. The menu is rooted in relationships with local farmers and ranchers and on-property ingredients like juniper berries and sagebrush; if the concept had a signature it would be the juniper-rubbed lamb, in which whole juniper branches are crushed with garlic, shallots, bay leaf and aromatics, rubbed into loin and shoulder to cure, seared with a touch of smoke and then braised in wine (white in warm months, red in winter). Nods to Holl’s foraging appear in dishes like pickled mushrooms atop smoked beef carpaccio, and seasonality will show by swapping peak ingredients into mainstays (for example, halibut in coconut fish broth with asparagus and favas in summer shifting to red curry squash and kale in fall). The over-the-top Fifty Dollar Burger embodies the resort’s opulence—a bone marrow brioche bun (marrow whipped into butter and folded into the dough), an Angus patty, a slice of foie gras torchon, truffle aioli and a dusting of edible gold—and the bar program, conceived with Scott Baird of Trick Dog, emphasizes Oregon-distilled vodkas and gins and western whiskeys with cocktails like the vodka-based Huckleberry Fix and the Oregon Trail Mix Old Fashioned served with cacao-and-nut bark." - Janey Wong

Had a wonderful dining experience at Wild Rye Restaurant in Bend! We enjoyed their Sunday harvest dinner, which features a preset menu with farm-to-table dishes. The quality of the food was excellent - you can really taste the freshness and care that goes into sourcing local ingredients. I highly recommend The Trickster cocktail - it was absolutely delicious and a perfect complement to the meal. The portion sizes were decent for sharing, though not huge, but the quality more than made up for it. The service was fantastic - our server was attentive and knowledgeable throughout the evening. The atmosphere strikes the perfect balance of upscale casual, making it a great spot for a special meal without being overly formal. The farm-to-table concept really shines here, and the preset dinner format takes the guesswork out of ordering while ensuring you get a well-curated dining experience. The views are stunning, but the experience didn’t match the setting. Service was very slow, likely because staff were busy with a wedding reception next door, and guests were frequently passing through the dining area. I’d suggest avoiding this spot if there’s a wedding happening on-site. The oysters and Brie were excellent, but the beef tenderloin was overpriced for the portion size and just average in flavor. Unfortunately, I ended the night with food poisoning, which made the experience especially disappointing for a special occasion.

The waiter lady was amazing, as was the service, but I didn't like the food to be honest. Also, the steak was expensive and small. The views, nevertheless, are amazing. Also, we got complimentary desserts, which was a very nice gesture.

Weird restaurant. They have two menus. One for to go and one for dine in. My wife and I fancied to the $24 hamburger over the $50 hamburger. Nope not allowed.you need to eat your $24 hamburger on the plastic burger we provide. If you want the $50 hamburger then you can eat it in the restaurant. We saw dozens of people happily eating their $100++ dinners on Styrofoam. Not for us. If the kitchen is cooking for to go why can't those people that drink and tip order the food on the sacred menu

While waiting for a table a small family had several children that were running around the lobby and hitting me with their toys. It didn't seem to bother the hostess. After we sat down the wait staff was either apathetic or rude. Atmosphere was more like an upscale sports bar and less like a fine dining restaurant. The food was equivalent to about what you would get at an outback steakhouse. I've eaten at some of the best restaurants in the country, and when you price your food similar to those restaurants, you're going to be judged with them. Unfortunately as much as we wanted to like this place we won't be coming back.

We are locals and I privately reached out so they could take care of the less than happy experience we had (management didn't bother to) 1st the wine was great but not local. 2nd service (server) was not great not even good. 3rd food was ick (we had appetizers only) and way overpriced. We have been going there for 10 years and food has been hit and miss always mainly miss, but its half way between my besties and my home. I'm just sad they dont care enough about the locals to respond. Buyer beware... your food may be great or it may suck.

The menu was so limited, I was with a party that wanted to eat here but I just settled with the $50 that ended up being pretty mundane (but to be honest the foie gras made it really gross but that was probably my fault for wanting to try it.)
