"Will BYOB, one of Eater Philly’s 38 essential restaurants in the city, will serve its last dish later this spring. Chef-owner Chris Kearse is shutting the doors at the small French-inspired eatery on East Passyunk Avenue to head to Old City, where he plans to open a bigger French restaurant called Forsythia. Kearse debuted Will in 2012 after honing his skills at notable spots Alinea, Tru, and Charlie Trotter’s in Chicago, French Laundry in northern California, and Lacroix and Pumpkin in Philly. "You should go to Will for dinner at some point, and it should be for a special occasion. It doesn’t look like much inside, but this place makes some of the best French food you’ll get in the city. Most days they do an a la carte menu where you can pick from combinations you probably haven’t seen before, like Burgundy snails that come in a miso sauce with a side of grits, but on Sundays they do a prix fixe menu where you’ll get a reasonably-priced $45 four-course meal.
