"There is so much to enjoy, and so much to admire, when dining at Wilsons. It’s one of those appealing neighbourhood operations that works in pure harmony, with everyone from the chefs to the service team sharing the same ethos. Sustainability and careful sourcing of superb ingredients are at the forefront, with the restaurant’s own smallholding providing much of the produce on the tasting menu of expertly crafted dishes. Each one is exquisitely balanced and full of understated originality, like dry-aged trout with pickled mushrooms and sweet onion broth." - Michelin Inspector

Spotlight on Bristol, England

"Wilsons really fits the bill of being a proper neighborhood restaurant. Vodkas infused with various fruits sit on the bar and large blackboards list the day's dishes. Highly seasonal cooking is gutsy, generous and flavorsome and some of the ingredients come from their own smallholding." - The MICHELIN Guide Nordic Editorial Team

An absolute gem - this small (newly!) Michelin-starred restaurant completely blew me and my partner away. The £35 lunch menu (3 courses plus sides and nibbles!) is, without exaggeration, some of the best value I've ever experienced for food of this calibre. Every dish was perfectly executed, with an exceptional balance of flavours, originality, and finesse. The ingredients were clearly of outstanding quality: fresh, seasonal (straight from the local farms), and treated with the utmost respect. Presentation was beautiful but never pretentious. Three highlights among many: the homemade smoky iced tea with lavender - so refreshing, try it; the bread course served with canapés and a luxurious roe cream - simple in concept but incredibly elegant; and a stunning strawberry dessert that managed to be both playful and refined, with layers of flavour and texture (that kind of airy jelly wow!) that lingered long after the last bite. The service was warm, professional, and perfectly paced without ever being intrusive. I think this place is a true hidden treasure - refined yet approachable and affordable, generous in both spirit and substance. I can’t recommend it highly enough.

Absolutely outstanding. The food was honestly absolutely breathtaking. The staff are all absolutely lovely, attentive and so incredibly knowledgable, telling us the story of the food and wine. Honestly it is the best place in Bristol. Cant wait to go back. Congrats Jan on your first star. Absolutely so well deserved.

Second visit to Wilson’s and it continues to exceed all expectations. Having dined at numerous Michelin star restaurants, this stands out as one of the best I’ve encountered. From the food to service, and overall vibes Wilson’s hits the mark! This time, I brought colleagues and they’re all raving about the experience. Not the cheapest option, but absolutely worth every penny. 10/10, would and have traveled to Bristol just for this meal. 🙌🏼🙌🏼🙌🏼

We did their dinner tasting menu with wine paring and it was amazing! Every single wine was great, and they really paired well with dishes! We also enjoyed their lemon cello drink ❤️ Defo gonna revisit!

Such a wonderful, friendly welcome. The team were amazing, as was the menu. Wilson's is quite a cozy space, but this didn't detract from our enjoyment. A lovely selection of thoughtfully selected wines accompanied the dishes perfectly. Thank you for a perfect evening, we'll definitely be back soon!

It's obvious why this place has earned it's Michelin star, the attention and care in every step is not to waste. All the servers worked in a very efficient way and the service flowed very smoothly. Trying to describe the food would be pointless as there was such a variety and the flavours so deep that you would have to try yourself to appreciate. I hope to come back again.

A really delightful, thoughtful meal. One of the best tasting menus I’ve had - just very clean, bright flavours, fresh and frequently surprising. Nothing is too over complicated and we left feeling just the right amount of full. My partner and I had the 6 course tasting menu and it included some additional surprises - a supplementary bowl of chile dashi alongside one of the dishes, a fantastic pre-dessert palette cleanser and petit-fours ending the meal. Really lovely little spot (also next to a great pasta joint - Little Hollows). I’d recommend a late reservation as it can get pretty busy during peak hours so it’s nice when the room starts to clear out a bit and there’s a bit more space to just enjoy the atmosphere.

We had a lovely time at Wilson’s! Whole experience was exceptional and the service was fantastic. Wilson’s also catered to my needs without me feeling a nuisance which I appreciated. Drinks were ordered and delivered very fast which is a bonus. Loved it and would highly recommend.
