Spotlight on Bristol, England

"Wilsons really fits the bill of being a proper neighborhood restaurant. Vodkas infused with various fruits sit on the bar and large blackboards list the day's dishes. Highly seasonal cooking is gutsy, generous and flavorsome and some of the ingredients come from their own smallholding." - The MICHELIN Guide Nordic Editorial Team

Absolutely outstanding. The food was honestly absolutely breathtaking. The staff are all absolutely lovely, attentive and so incredibly knowledgable, telling us the story of the food and wine. Honestly it is the best place in Bristol. Cant wait to go back. Congrats Jan on your first star. Absolutely so well deserved.

An absolute gem - this small (newly!) Michelin-starred restaurant completely blew me and my partner away. The £35 lunch menu (3 courses plus sides and nibbles!) is, without exaggeration, some of the best value I've ever experienced for food of this calibre. Every dish was perfectly executed, with an exceptional balance of flavours, originality, and finesse. The ingredients were clearly of outstanding quality: fresh, seasonal (straight from the local farms), and treated with the utmost respect. Presentation was beautiful but never pretentious. Three highlights among many: the homemade smoky iced tea with lavender - so refreshing, try it; the bread course served with canapés and a luxurious roe cream - simple in concept but incredibly elegant; and a stunning strawberry dessert that managed to be both playful and refined, with layers of flavour and texture (that kind of airy jelly wow!) that lingered long after the last bite. The service was warm, professional, and perfectly paced without ever being intrusive. I think this place is a true hidden treasure - refined yet approachable and affordable, generous in both spirit and substance. I can’t recommend it highly enough.

We had a lovely time at Wilson’s! Whole experience was exceptional and the service was fantastic. Wilson’s also catered to my needs without me feeling a nuisance which I appreciated. Drinks were ordered and delivered very fast which is a bonus. Loved it and would highly recommend.

We did their dinner tasting menu with wine paring and it was amazing! Every single wine was great, and they really paired well with dishes! We also enjoyed their lemon cello drink ❤️ Defo gonna revisit!

Deserves its accolades after nine years of hard graft. Attentive and knowledgeable staff. Original flavour combinations beautifully executed. Struggled to find a fault but a bolder wine with the venison would not have gone amiss. Fresh local produce often their own. Great buzz to the place.

What a pleasant surprise! This little space creates from the heart: an ode to Mother Nature's seasonal offer. No à la carte, just a journey carefully presented to highlight what the local reality has to offer (the menu is obviously revisited often). Impeccable textures and a good mix of fish, meat and veggies. All dietary restrictions can be accommodated. The bakery next-door (part of the project) provides the freshest bread. The service is excellent with no need to leave Bristol's friendliness out of the door. Welcoming atmosphere.

Fantastic dining at Wilson's last night for my birthday dinner. The staff are super warm and have great attention to detail which really complements the amazing food to create a beautiful fine dining experience. Love the farm to table concept, especially with the changing menu to go with seasonality. The menu last night was comforting and warm which was perfect for an autumnal evening. The dishes were incredibly well balanced, and I thoroughly enjoyed the harmony of the different notes coming together in each plate. The highlights for me were the Florence onion and smoked fish bones, the mallard and the flan. The only dish that I wasn't a fan of as much was the herb sorbet with meringue, it was a tad too punchy for me but certainly did its job of cleansing my palate! I've wanted to come to Wilson's for a long time and it actually exceeded expectations! I look forward to visiting again in the future.

Great flavours throughout the whole meal Staff is very knowledgeable on anything served, including drinks. They took care of my allergies, but the flavours remained. Welldone.
