You know when a menu starts with a bald 'Fish head soup' followed by 'bread and butter' you're either in the hands of a maestro or there's a looonng afternoon looming. Well, guess what, 'fish head soup' is a delightful cloud of fishy goodness, with sweet strands of lightly pickled onion and fish rillette making an extraordinary start to (yet another) amazing tasting menu at Wilson's. Big shout out to the wine flight, I've never had a win called Jeff, but with the fallow deer plate it was stupendous. And don't get me started on the mouth bomb of herb sorbet topped with Italian meringue. Impeccable, friendly, knowledgeable service tops off the best dining experience in Bristol/the South West imho.
