Great food experience! Top quality ingredients and innovative food. Knowledgeable staff and welcoming. Simple but nice interior. Especially enjoyed fish head soup and crab course with scotch bonnet powder. Also stunning main course! Very good price for this sort of food. The only thing I didn’t enjoy was how close the tables are to each other but they say they’re busy bistro so that part of their vibe. I’m definetly planning to come back for lunch menu and different season. Recommend for everyone to come at least once.

An amazing meal! Each course was faultless and they complemented each other perfectly to deliver a wonderful experience. The first few courses were subtle and understated but still delivered complex and sometimes surprising flavours. Then the cod, deer and cheese added substance. Finally the desserts cleverly bridged from savoury to sweet. Too many highlights but probably the fallow deer was my favourite. The produce from the restaurants market garden was a wonderful theme running through the meal.

This was the best meal me and my partner have had. Incredibly well thought through menue. We got the wine pairing which was well worth it. We had multiple team members looking after us and every single one was friendly and knowledgable. Everyone should go here and tell all their friends and family to do the same!

Left unhappy after specifically going to a Michelin star for a lovely meal. Slow service, staff is snooty and arrogant. Inattentive. Food was very average. Not satisfying. Wine pairings could have been better. Spending 500£ for a meal for 4. Could have had a better meal in Bristol easily. Being a world traveller and dined at many Michelin stars before. They are losing their Michelin star next year for sure. As it wasn’t up to the mark.

Honestly very surprised I haven't reviewed this place before now! Wilson's is our favourite Bristol restaurant and its recent Michelin star has been a long time coming. The fixed single price tasting menu is always different and in the times we have been there I have never had the same dish twice. The photos are from last night's visit which was one of the most enjoyable menus I have eaten anywhere, even the "bread and butter" wasn't with chicken liver parfait, sardines in a nori tart added for good measure. I did not have the crab because, alas, crab hates me. What I did have was a bean stew with a mushroom foam and a cured egg-yolk which was rather funny as my wife and I had just been joking about the lack of a "difficult egg" course. This hit all the right notes, I could eat a bucket of it. Monkfish was perfectly cooked (as you would expect) with some fantastic accompanying flavours which I will be attempting to replicate as soon as I aquire some. The Pheasant was a revelation, I have eaten it before but not done this well, and the "Kentucky Fried Pheasant" thighs on skewers that came with it provided texture without needing crunchy carbs. As a side note, they should be selling bags of that stuff as a takeaway. Desserts were, as they always are, bonkers. Somewhere there is an evil genius concocting flavour combinations that really shouldn't work but somehow do. Celeriac ice cream? I have had roast potato ice cream in this place before. All in all, a great night out although marred slightly by two things. 1) it needed just a little bit more light for a dark Halloween evening. 2) the chairs are very light, so when I stood up after enjoying the excellent wine pairings, my seat decided to accept the invitation to lie down. Sorry about that guys. All in all, an establishment you really need to visit if you have the opportunity. Book though, it's getting busy and long may it continue to do so!

Absolutely outstanding. The food was honestly absolutely breathtaking. The staff are all absolutely lovely, attentive and so incredibly knowledgable, telling us the story of the food and wine. Honestly it is the best place in Bristol. Cant wait to go back. Congrats Jan on your first star. Absolutely so well deserved.

Second visit to Wilson’s and it continues to exceed all expectations. Having dined at numerous Michelin star restaurants, this stands out as one of the best I’ve encountered. From the food to service, and overall vibes Wilson’s hits the mark! This time, I brought colleagues and they’re all raving about the experience. Not the cheapest option, but absolutely worth every penny. 10/10, would and have traveled to Bristol just for this meal. 🙌🏼🙌🏼🙌🏼
