Went to Wineaux for the first time yesterday. I had really high expectations considering it's the same operators as Libertine Social and the former Sage at Aria which was so excellent. And that it's at UnCommons which is known for bringing unique and vibey concepts.
Wineaux was everything we expected it to be!
Simply put, it is a wine bar and market with incredible food. You don't come here for Camus and flat bread. You come here to discover. Apparently Strip employees come here when they're off because they carry wines that are harder to find at a really good value.
We started with the charcuterie board, Cacio e Pepe house-made popcorn, and the oysters.
Some of us had a Sancerre to start, and some of us had martinis... here's one of the decisions Wineaux made to reinforce that they are a wine bar. They have spirits at the bar, but only one type of vodka, one type of gin, one tequila, etc. They are excellent selections of each, but no Goose or Kettle One.
This is also a good time to introduce Norman, the GM. He made the martinis. When he came around to the table, we suggested they update the menu to call them "Norman's Perfect Martini's". They were that good!

About the Food:
We ordered more oysters because they were exceptional, the hamachi & caviar, beef tartare, and the foie parfait, and the marinated olives & Marcona almonds. Oh, oh! I almost forgot the Savory Danish!! We actually got 2 of these.
Nothing I can say here in words will do the food justice. So many restaurants copy staple items. Others have small bites that just aren't exciting. Literally everything we tried were unique masterpieces. You could say lots of restaurants have beef tartare and you'd be right. But the salsa macha, pickled onions, green olives and horseradish make it special. I could go dish by dish and describe why it's special but I think I made my point.
About the Wine:
We put all our faith in our server, Max, who absolutely delivered. And, he's the kind of down to Earth guy you'd enjoy getting a beer with. For the first bottle we described that we wanted to start with a red that was lighter. He walked us through some options at the price points we wanted to stay within. We went with the Vietti Perbacco Langhe Nebbiolo.
For the second bottle, we asked Max for something medium bodied to build on the Nebbiolo. Max brought us Alain Graillot Crozes-Hermitage.
For the third and final bottle we asked for something big and bold! Max recommended the Ashes & Diamonds Bates.
Loved them all and even bought some to take home. That's how the discover and wine market part work.
About the Dessert:
Once again... masterpieces! We ordered both of the options on the menu which are the malted waffle with peanut butter and fig preserves, and the dark chocolate pot de crème! AND... the special they had that night was called the Harry's Berries Panna Cotta. Holy dang!!!
About the Dessert Wine:
They have three. We tried each of course! Once again, something for everyone ranging from Petite Manseng which was white, lighter and less sweet to the Muffato Della Sala, also white but a tad more sweet and the 20 year Tawny which was exactly what you would expect and excellent!
Add to the experience that the room is gorgeous. It's light, airy and stylish. This is the kind of place that will become a staple for a lot of people. They just have an incredible range of offerings that people will enjoy. Well done!
