This was a great start for our first trip to Fargo. On a cold winter day, beer, soup, sausages, and a giant pretzel seemed like just the ticket! We started with the knoephla soup, since the online guides said we should, and our helpful server reinforced it. He said, "pretty much everyone's grandma makes it and I love it." This soup really does feel like a grandmotherly hug and it's delicious. We followed with the bacon and beer flight, mostly because we've never seen that on a menu before. The flight included peppered bacon paired with Hefeweizen, Guinness glaze bacon with Dunkel, brown sugar bacon with Fargo Iron Horse, and smoked bacon with Summit Porter. I think the Guinness with Dunkel was my favorite. I would have liked all of the bacon to be cooked a little longer, but they were still good. We were still working on the soup and the bacon when the behemoth arrived--the exotic sausage platter. We added a sausage for good measure because we couldn't decide on just three. Our choices were boar, rabbit, pheasant, and buffalo cheddar. The boar was my favorite, but the rabbit was a close second. In addition to the monster pretzel, the platter included sides of red cabbage, sautéed onions, jalapeños, German potato salad, sautéed bell peppers, and sauerkraut. And a large cup of beer cheese dip--I could drink this. I wasn't a fan of the potato salad, but truth be told, I seldom like potato salad. We finished with a piece of kuchen, a nice way to end a great meal. I can see how this would be a fun place to hang out with a crowd. My only ding was that the food came out way too fast, which I know would be a good thing if you have a big group, but we felt a little rushed. All in all, though, we enjoyed our visit!
