Finally tried Xing Fu Tang since I was nearby and this was the most "proper" bubble tea.
I ordered boba milk tea with light ice.
I didn't want such a sweet drink and I care more about the tea, so I ordered boba milk tea. I was originally debating whether to get light ice or no ice ($0.50 extra) but decided against paying extra. It worked out since it was quite hot and sunny that day. Most of the ice melted before I got to my next destination.
Milk Tea - normal nothing to rave over, but solid.
Boba - I was impressed by this. It was scooped from a pot of boba soaked in hot brown sugar. When I got my drink, the bottom of the cup was hot from the boba. This can explain why the light ice melted quickly too. I was impressed by the texture being very "fresh" and chewy. I wish it had more chew to it, but its texture is definitely not the same as other places. Hence, I don't want to call it tapioca, because I'm not sure how much tapioca starch is in there. The texture and flavor here tastes more like rice flour (aka taste and texture of tong yuen). Tapioca is more translucent than rice (relatively speaking). Regardless, the freshness of the flour is a selling point here and makes Xin Fu Tang stand out amongst other bubble tea shops. I won't say this is the reason to make me want to come back though.
They had limited edition strawberry boba when I went, and I think my cup accidentally had a few pieces of strawberry boba in there. Not bad, but too candy-like for me. There were a few pieces that weren't cooked thoroughly either and had a stiff center.
Store layout - this deserves a whole section.
They allocated like 75% of the store for the kitchen (nothing wrong with that) and 25% for customers which include ordering, pickup up, drinking, and waiting for all of the above. Out of that 25%, they partitioned out 15% of it for customers to wait in line to order - basically from the edge of the door straight up towards the cashier. That's actually very little space. There's no clear designation of what direction people should line up in, and I think only ~5 people can fit there. Everyone else needs to stand outside. That's so inefficient on multiple levels!
It's a cramped spot when there's a lot of people waiting. Standing on the far left side of the store means we can't see both TVs showing the menu. The TVs are middle aligned, so we can only see the left TV, and barely make out the right TV. They had a menu at the counter, but none at the door or on the left wall.
Also, I don't understand why the pickup area is right next to the cashier (perhaps why the line to order is set to the left of the pickup half of the counter) when they can make it on the far right end of the store, easy for people to leave afterwards too. Now people finish ordering and crowd next to the ordering line so they can be in front of the pickup counter.
They devoted 70% of the store horizontally to a glass wall showing the drink making process. I'm not saying that's not valuable, but it's not practical when it creates inefficiencies.
Also they have 3-4 standing tables. It's weird. I'd rather they let people use that space to wait (both for ordering and getting their drinks).
Overall, this place is objectively good, but the boba texture and store layout and location makes me less likely to want to come again.
