"Bamboo Sushi veteran Yoshi Ikeda opened this cart in the Multnomah Village French Quarter pod in 2019 and has been serving high-caliber fish ever since. The rolls are fun and innovative: The lime green roll with sesame-crusted spinach, cucumber, roasted pepper, avocado, and microgreens is a gift to vegetarians. And the cart’s ginger miso goes with literally everything. Rotating nigiri and occasional hand rolls showcase the super fresh seafood Ikeda sources. "Yoshi’s isn’t the only sushi cart in town, but thanks to the quality fish and original rolls incorporating everything from jackfruit to curry shrimp, this Multnomah Village option operates a little differently from your typical food truck. Ordering is decidedly old school—by phone only—so you can’t walk up and get maki on a whim. Ask about the specials (or check their Instagram) for rice-based bites like nigiri topped with Japanese snapper and sakura jelly or rolls filled with scallops, salmon, and tamago, crowned with house-cured salmon eggs. "Working in a small Multnomah Village cart doesn’t stop Yoshi Ikeda, a former Bamboo Sushi chef, from serving high-caliber nigiri and maki. Yoshi’s offers a small menu of innovative rolls and rotating nigiri, as well as the occasional handroll or chirashi box special, but the meticulously seared scallop nigiri with yuzu pepper marmalade continues to be the star of the show.
