Chongqing Wan Za Noodles Are Taking Over Menus | Eater NY
"I stumbled on a mind-bogglingly good bowl at the new Yuan in Jersey City near Newport; their wan za noodles ($14) are lush, with extra aromatics like chopped scallions and cilantro, plus pickled mustard greens, crushed peanuts, and fermented beans. The spice level is almost incendiary." - Robert Sietsema

"I tried what is basically a Sichuan shredded potatoes dish at Yuan, amplified with pickled chiles and grated black truffles ($15), and I’d never experienced potatoes quite like this before. The new Chinese restaurant sits right above the Newport stop on the PATH train and is already mobbed in the evenings — make a reservation." - Eater Staff
A Chinese Newcomer Where Fish Is Prepared Tableside | Eater NY
At 537 Washington Boulevard, near the North Garage Driveway, I found a sleek new Chinese restaurant with an outdoor courtyard dotted with potted plants and an interior that holds about 80, where lights hang from the high ceiling like crumpled constellations and a dangling chain-link curtain circumnavigates the room; booths clad in dark woods offered the most comfortable seating while tables jumbled in the center. On my first visit a teenage pianist played Beethoven’s sonatas on a grand piano in the middle of the room; on a later visit she and the piano had vanished. The restaurant’s foremost specialty is whole fish—pick sea bass or croaker—that can be done five different ways; the fish weighs about a pound-and-a-half or slightly more and can easily feed three or four. The “whole fish in foil” ($42) was the most astonishing: a raw fish wrapped en papillote, ferried to the table on a brazier, briefly lit and then ceremoniously unwrapped to reveal a steaming fish in a chunky sea of bright red layered with pickled red chiles. More conventional is the province’s braised fish in Sichuan bean sauce, with multiple types of chiles, Sichuan peppercorns used with a restrained hand, and an intense fermented bean sauce; there is also a whole fish in tofu pudding I did not get to. The vast menu (after three visits I’d only tried about a fifth) includes a pig ear appetizer ($12) as soft as a glove, pig kidney carved into flower-like shapes with a mild minerally flavor, beef tendon with peppers ($28) served in great wobbly chunks flavored with dried and mild fresh chiles, eggplant preparations such as eggplant with minced pepper ($10) and a wok-fried yu xiang eggplant with bean paste, chiles, ginger and black vinegar, a mild Dongbei stir-fry of corn and pine nuts ($13) that tastes buttery, shredded potatoes lightly sautéed with black truffle sauce, and a cold gluten salad of spongy beige cubes in a sweet brown dressing decorated with roasted peanuts and lily shoots. Taken together, these dishes point to Yuan as an exciting addition to Jersey City’s burgeoning Chinese restaurant corridor. - Robert Sietsema

We had an amazing dining experience at Yuan! The flavors were bold, authentic, and beautifully presented. Every dish had a unique touch — you can tell the ingredients are fresh and thoughtfully prepared. The ambiance was cozy yet modern, and the staff were incredibly warm and attentive. Highly recommend this spot if you’re craving delicious Asian fusion with a classy twist. We’ll definitely be back!

This is my 2nd time here since their opening and I have to say their dishes are amazing! Highly recommend ordering the pork hock, it was the tender and melts in your mouth. Their vegetable dishes are as good as their mains! Another dish I loved was the stir fired pork kidney (it is very spicy so be warned!)
The servers were attentive and friendly. They always came by to check on us and made sure our water glass was full. The ambiance and decor is nice and clean. Would definitely recommend this place for anyone in the area craving Chinese or Asian cuisine.

The place seemed nice and cozy. We were seated in booth seating.
Our server made some major mistakes on our order. But another server came to help and fix it. She said she was new there but she didn’t really apologize.
The food that we ordered were pretty delish but on a smaller portion. The stir fry noodles were really good. Steamed dumplings were freshly made there and tasted like homemade from my mom’s Kitchen.
The eggplants and green beans were really tasty!
Spicy wontons were served in chili sauce but tooo watery, they were more like in broth? I never had them that way before.
Fried mochi with brown sugar syrup stood out the most! Small portion though.

Not recommended. The prices are high and the portions are small. The first dish was $26 and finished in a few bites. The $23 ribs were just average. Compared to other nearby or Manhattan restaurants, the prices and portions are unreasonable. The food tastes okay, but not worth the money. Not sure if the 5-star reviews are real.

A recent visit to 'Yuan Jersey City' left us thoroughly impressed with their inventive take on comfort food. The menu boasted a delightful mix of authentic and classic Chinese dishes with exciting twists, like the perfectly-crisped fried bell fish, noodles and all other chicken items. The creamy coconut pudding and caramel cheese pudding was mouthwatering and extremely delicious desert they suggested us to try. The service was warm and attentive, ensuring each plate arrived perfectly timed and with detailed explanations of the unique flavor profiles. The cozy, rustic ambiance further enhanced the dining experience, making 'Yuan' a must-try for anyone seeking delicious, elevated comfort food in a welcoming setting.

I went there last Saturday with my friend for her birthday. The restaurant is very modern and clean, service was good as well. We ordered the crispy bell fish and pork shrimp and chives steamed dumplings and they were both delicious and well seasoned, super recommended! And for the main course we had beef stir fried noodles, it was so good and the portions were reasonable! And for the dessert we had the fried rice cake it was a little chewy but good.
Great experience I’d definitely recommend and I will be back!
