This place is highly recommended and also highly popular. And their menu is very limited. I had many蚵仔煎, I wanted to find out why this place is so popular. I have to wait about 45 minutes to gain a seating inside. I first taste the garlic oyster, I notice that the oysters cooked perfectly because there's no slimy taste and the oyster meat is cooked through. Then I try their蚵仔煎, immediately I could tell this oyster pancake it's different than others. They have less cornstarch and less vegetable but more eggs and oysters. The flavor of蚵仔煎 it's very good and you still could taste umami flavor from the oyster and the sauce. Only knock I have is there dining area, it's basically a table and chairs and nothing much else they don't serve water and you have to grab your own napkin. It's like eating street food but inside. Always check their notification for their days off.

The line was long, but worth it! We went there at around 7:30pm on a Sunday, waited for 45min to get in. All the food portion was tiny. We spent around NTD140 per person, but we decided not to fully fill our stomach because there're more food in the night market. The food was great, clams were extra fresh and juicy, the oyster omelette was so good as well. The seating area was clean, comfy and spacious. We will definitely come again.

The Taiwanese-style oyster omelet is a must-try delicacy at this venue. While there may be a slight wait to secure a table, the experience is undoubtedly worth the patience. The omelet is expertly crafted, featuring fresh oysters and a flavorful combination of ingredients that offer a unique and authentic taste of Taiwanese street food. If you happen to be visiting Ningxia Market, this establishment is highly recommended for its distinctive and satisfying dish. It’s a culinary experience that should not be missed by anyone exploring the vibrant market scene.

This is a classic Taipei establishment, in operation since 1865 and recommended by the Michelin Guide. I highly recommend trying the oyster omelette—ask for less tapioca flour to keep it light and skip the sauce to enjoy its natural flavor. Personally, I find it’s just right with a touch of sweetness. Be prepared for a long line outside, but it’s one of the few places with air-conditioned indoor seating! The service is decent, though not particularly warm or friendly.

The Ningxia Night Market is a popular destination for foodies, and there is usually a long line in front of this restaurant. Fortunately, the polite staff effectively manages the large number of customers, allowing for relatively quick turnover, so I didn’t have to wait too long. The overall atmosphere is pleasant, and the tables are clean. I can taste the sweetness of the main ingredient, oysters, resulting from their freshness. Both the oyster omelette and the oyster soup are flavorful; however, I find them a bit overhyped. It's worth a visit if you're not in a hurry.

My first dinner in this trip. Thought it is popular and famous so cannot be wrong. I am wrong. Ordered the top 3 dish in this shop. Only the oyster omelette I can agree on. The rest 2 dish especially the soup one is truly disappointing. Service and environment is not bad else should be 3 star worth.

A classic Taipei establishment — my dad used to go when he was younger and then started bringing us as kids. Over the years, the prices have increased and the space has been continually updated (especially after the Michelin rec) but the taste has largely stayed true to its roots! Get the oyster pancake and ask them to go light on the tapioca flour, and top it off with the ginger clam soup!

Google
Very good oyster omelet, a lot of oysters, soft, cooked well. Went at lunch time which was a drastically shorter wait, <10 minutes. On a busy night can be 2+ hour wait, hard to say it's worth it. There's 2 lines, one for takeout and one for dine in.

Yelp
Yuan Huan Pien Oyster Egg Omelette (established in 1965) is one of the most popular and busiest eateries in Ningxia Night Market. This spot received the Michelin Bib Gourmand designation from 2018 to 2022 ( https://guide.michelin.com/us/en/taipei-region/taipei/restaurant/yuan-huan-pien-oyster-egg-omelette ). It also gained more recognition when CEO of Nvidia Jensen Huang (often referred to as the 'Godfather of AI') visited this eatery twice and brought TSMC founder Morris Chang on his second visit on May 29, 2024. [How to get here]: Approximately 9-minute walk from the Taipei MRT Shuanglian (雙連) station or approximately 12-minute walk from the Taipei MRT Daqiaotou (大橋頭) station. [How to order]: There was a waiting line (dine-in customers only) at 8:30 PM on Friday, but it moved fairly quickly. While waiting, a staff member will ask whether you are dining in or taking out. Take-out customers can skip the line and go directly to the counter to place their order. The eatery has a conveyor belt system at the cooking station. So when the oyster pancakes are ready, the staff can quickly grab a plate and serve them to dine-in customers. [Menu]: English and Japanese friendly menu. Apparently they use fresh oysters from Tainan that are shipped daily. Another popular item is the fried sparerib soup - in fact the soup was so popular that it had already sold out by 8:30 PM. Other items on the menu include Taiwanese pork sticky rice, oyster soup, clam soup, sparerib radish soup, and garlic oyster. *** Oyster pancake (蚵仔煎 90 NTD): Lives up to expectations - delicious homemade sweet hot sauce and a generous amount of oysters. Taiwanese pork sticky rice (米糕 small 35 NTD): This dish felt very similar to minced pork rice but not quite the same - I thought it was just okay. *** The oyster pancake is worth a try, but be sure to come earlier if you want to try the sparerib soup.

Yelp
Finally made it!!! The wait time was too much the first time, this is the second time I've tried. We quickly sat down and placed our orders. A very clean and organized restaurant. Staffs are extremely friendly and efficient with our orders. No wonder they are Michelin recommended!! The food is so fresh and delicious. The oysters are so big and tender, sticky rice is socked with rich flavors. Everything is so satisfying.

Yelp
道地美食 來寧夏夜市的必吃 If you fancy oysters then come try their oysters speciality. They have opened since 1965 and well known for their Oyster Omelette. They have several items on their menu but I have only sampled their Oyster Soup and Oyster Omelette plus the Taiwanese Pork Sticky Rice and that would be my usual triple combo order when I visit. There's usually a line up for dining in but they offer efficient service in managing the line by taking your order while waiting in line. Ambiance is decent and clean for dine-in but you most likely have to share a table as there's limited seating and tables are placed quite closely together. Though they do offer a separate line for takeout orders, I would still recommend dining in for the best taste. Yes, they have received Michelin ratings for their foods yet there's obviously no table service at night market diners. It's not super fast and furious to dine in; yet the common practice would be to eat quickly, pay and go and probably not the best choice for visiting with strollers or for exchanging conversations in large groups. As an oyster lover, I would rate them 5 stars for consistent quality in oysters and for efficiency. #YelpTaiwan #nightmarket #oysters

Yelp
Do you like oysters? Then you should jump in line to try this traditional taiwanese street food. It's a short-ish wait for a long line because people eat fast and leave! Or you can also order to go too~ The oyster omelettes are made fresh and continuously~ they're thick, loaded with plump oysters, and doused in signature salty, slightly sweet, and ever so slightly spicy sauce. This is one of my mom's favorite dishes, and she gave it two thumbs up! I personally don't care for oysters but can attest to their fresh oysters that are cleaned really well... no grit, no weird tastes! Is it life changing? Not in my opinion, but it impressed my Taiwanese mom and made her happy so I think that's a win. :D There are other menu items as well (garlic ousters = fried oysters, sticky rice, oyster/clam / sparerib soups. Pass on the Taiwanese pork sticky rice -- the rice isn't very sticky and the individual grains separate. The gravy hiding at the bottom was tasty, but there are better options elsewhere! Focus on what they're known for :) The shop is actually pretty big (separate room in the back), air conditioned, clean for night market standards, and the restroom was also very clean (even has a bidet, what...)! Cash only, service is friendly but to the point. You can even take photos at the little booth to the left of the storefront which describes their history and Michelin awards :D

Yelp
I lined up at 8:36pm on a Thursday. There was a fairly good amount of people in line. By 8:39pm the lady started to take my preorder. I got the oyster omelette - 85 NT which only comes in a small size (you would want to get 2 orders!), oyster soup - 85 NT, Taiwanese pork sticky rice - 35 NT small, and a sour plum juice - 40 NT. The oyster omelette is really the star here. It had a good amount of oysters in it and the gravy was tasty. I'm not usually a fan of Taiwanese oyster omelettes compared to the ones in Thailand, but I really liked it here. Not too goopy. I should have ordered 2 of them instead of the other menu items. The oyster soup was bland but it came with lots of oysters and the pork sticky rice, was just not for me. I don't think the rice was even sticky rice and it seems like every shop makes their braised pork rice differently.

Yelp
Okay but like explain to me why this is the best 蚵仔煎 I have ever had in my life. Was a Ningxia Night Market and was walking around when I saw a huge line waiting for this store, which could mean 2 things - either the hype is very real or a bunch of tourists started forming a line for no reason. Was a bit hesitant on waiting in the line, but it was seriously the best decision we made. First of all, the line goes by extremely quickly as they have multiple areas of seating in the restaurant and people eat fairly quickly so the turnover rate is fast. In addition, they have this conveyer belt where was the guy finishes making a portion of the oyster omelet, he puts it on a plate on the conveyer belt until a waiter takes it and puts it as part of the order. I have never seen anything like this and I was enamored. Also, they take your order while you wait in line so by the time you sit down the food is already in front of your face. - 蚵仔煎 - This was to die for!! Literally the best 蚵仔煎 (80NT) I've had in Taiwan so far with its extremely big 蚵仔 and super fresh ingredients. I don't know, it just tasted so fresh like a bite of heaven, I can't even describe it. You must try this out for yourself. - 蛤蜊湯 - This was also so dang good. The soup was so clear and full of clam flavor and all the clams were so fresh as well. I appreciate the fact that although the portion sizes looked really small, everything was so good. I feel like I didn't do a great job at describing the food, but I can't even explain to you how good it is. Its like when you eat something and you're like oh, I've definitely had this before. But then you eat something else and you had no idea these types of flavor profiles could come out of this food. Absolutely incredible! Turns out they were on the Michelin Bib Gourmand guide for many years which makes sense. Definitely will be part of my Taipei food bucket list from now on.

Yelp
This place is super busy, I was only able to order the oyster omelette since I wasn't seated inside. The line was way too long, and since I came with others that were not willing to wait for a seat, his is the only dish you can order to go. It was very fresh and I would say and agree with others that it is better than the hundreds of other venders that offer the same thing. Yes, I would make a special trip to stand in line and snatch a seat inside and order 1 of everything!! I heard it's spectacular :)

Yelp
In the whilst of the Ningxia Night Market chaos, I stumbled upon a long line. If there's anything I learned, a long line must mean it's something good. It turned out to be a Michelin oyster pancake spot, so we got one to try. The texture is slimey and gooey with bites of oyster mixed in. The flavor was good, but the texture wasn't my favorite after a few bites. It was good to try though.

Yelp
Utterly disappointment. There was a line outside, preorder, erc. When u sit down and food come, then u realize itsnproduction food. Obviously lack fornconsideration of any quality. Employee sitting in diningbareaneating bento from other establishment. That tells how much they like their own food. Will NEVER come back here again.

Yelp
There was a long line outside this restaurant and we decided to jump in line. It has a Michelin star as one of the best oyster omelette. We ordered one to go and I wished we ate inside to try various other items on their menu. One oyster omelette is 70NTD. 蚵仔煎 (Héz jiān) Located in the Ningxia night market on Min Sheng road. Yelp
A thick oyster pancake with the egg, green vegetable and oyster distributed evenly throughout. The potato starch had a good texture and the sauce on top was lightly sweet. This was a good version of oyster pancake, not my favorite but definitely pretty good. The interior seating area was clean and comfortable (enough A/C and air circulation.) This place is good enough to come back to.

Yelp
I have never been a fan of food that uses a ton of starch but I can get behind these oyster omelets. First of all, the skill level displayed by the person making them is a sight in itself. Try to get in a looky loo if you can. I thought the omelet would be too starchy but when you mix it all up, along with the sauce, it somehow works. I was also pleasantly surprised by the amount of oysters. Almost every bite was a perfect combination of oyster, egg, starch and sauce. My wife, who had been incessantly telling me how she's never had an oyster omelet that she liked, actually enjoyed the dish. If Ningxia night market is one of your destinations, this place is a must.

Yelp
We were in line for about 30 mins on a Saturday night to get in. Waiting in line was not painful as there was a lot going on around us to keep us entertained. Watching the guy make the omelette was super fun too. The clam soup was really great. It was so basic, almost only clam broth. Great for a hang over. The oyster omelette was ok. The oysters were fairly small compared to the bigger oysters in more used to in Japan and Vancouver. There was just a little too much starch for me in the omelette. It went well with the hot sauce on each table.

Yelp
I honestly don't know what the big deal is. But maybe that's me. I came here due to reading several blogs. Plus, the Michelin guide recommended this place. This place is a mini restaurant located at the Ningxia Night Market. They are known for their oyster omelettes. It has some veggies, eggs, at least two good size oysters, and a mochi rice with sauce. It wasn't bad, but nothing that made me think "Wow." It's cheap, $2.26 USD. It's a decent size. However, I would recommend eating other items instead in the market.
google avatar

Peerawit K.

Yelp
I made a mistake visiting this place. There's nothing special about this hyped oyster omelette. First, the oysters are so bloody hard to find as they are as tiny as my pinky fingernail. Second, the sauce is so sweet it ruins the flavour and the smell of eggs and oysters, make the dish very unbalanced and childly. Third, MSG in the omelette is too much. The best things in the dish are the texture of the fried starch, which is well done, and greens that lifted up the flavour.

Yelp
Best oyster pancakes I've ever had in my life. Best Chinese oyster dishes I've had. I'm saying this as someone who has visited several oyster farms and can differentiate among at least five varieties of oysters.
