"Following years of selling bagels at farmers markets and at a stall in the From Here On food hall, the team is opening its first standalone restaurant at 2203 N. Clybourn Avenue in Lincoln Park — a 2,500-square-foot, “traditional deli with modern touches” that doubles as a production facility with about two-thirds of the space devoted to the kitchen, replacing a commissary and giving them more control over production and quality. Founded in 2019 when Sam Zeitlin began baking bagels at home, the deli leans into New York–style bagels with a dense, chewy bite and expands the menu to include pastrami and corned beef Reubens; sandwiches filled with whitefish, tuna, or egg salad; Jewish staples like smoked salmon; and the return of sweets such as black-and-white cookies and chocolate babka, with “our sandwich game” increasing by about 50 percent. The space keeps the familiar green-and-white palette and offers 30 seats for dine-in, sits next to Pequod’s, and reflects strong community support via a WeFunder “Bagel Bond” that helped finance the buildout, investor names displayed on a column, and menu items created by investors.
