"As the Cantonese restaurant at The Peninsula Hong Kong, Spring Moon impressed me with interiors inspired by 1920s Shanghainese dining rooms and a kitchen that is balanced and precise: ingredients are hand-selected and cooking is executed perfectly, from pan-fried rice paper rolls with housemade XO chilli sauce to soup dumplings made with Sicilian shrimp.
