"Opened March 5 at 1812 East Sixth Street next to cocktail bar Whisler’s, the new truck is completely dedicated to ceviche and is run by owner Carlos Acosta, who had timed the opening to South by Southwest and said he's “still in shellshock” after the festival's cancellation. I learned the menu takes its cues from Baja California and includes five iterations, such as a shrimp ceviche on a tostada with pico de gallo and avocado; a Valentina shrimp or black drum fish topped with jalapeño-cilantro mayonnaise; and an octopus served with tiger milk (a fish marinade made with lime juice, fish stock, onions, and chiles). There are plans for specials using Mexican-sourced fish like kampachi and corvina, plus non-fish vegan and vegetarian options such as a beet tostada with hummus.
