"Opening April 5 on the second floor of the E.P. & L.P. complex in West Hollywood, I found the concept centers on agave cocktails paired with coastal Mexican cuisine and a menu that shifts the space away from its former Southeast Asian direction. Headed by native Angeleno chef Samantha Quintero (The Aviary, Belly Q, Salero, Night + Market Sahm) and led by owners Grant Smillie and David Combes, the restaurant—named for a type of drum to fit the venue’s musical theme and tied to Botanical Hospitality Group’s other holdings like Grandmaster Recorders—draws on multiple regions of Mexico and flavors from Quintero’s childhood. The small plates, tacos, tostadas and large, meat- and seafood-forward plates rely on local produce; vegetarians and vegans can choose items such as chile poblano croquettes with queso Oaxaca or tacos de hongos with smoked guacamole, while a shareable large plate example is mojara, a grilled whole seabass with coconut lime sauce. Drinks focus on agave spirits (mezcal-rita, cucumber-jalapeño margarita) and a cocktail called Mi Amore featuring strawberry-infused mezcal, Alma Tepec, Campari and vermouth topped with a negroni foam made from gin, rose water, coconut milk and orange juice. Desserts include flan de romero with rosemary crumb and grapefruit gelée, churros, and three ice cream flavors—Mexican hot chocolate, fresas con crema, and horchata. Branded and designed by Frame, the space mixes classic Mexican American diner touches (bright posters on stucco) with WeHo sensibilities—vibrant color splashes, on-trend minimalism, checkered motifs, handmade concrete pendant fixtures from Mexico, textured white walls, and artwork from local LA and Mexican artists.
