"I've watched this operation grow from an underground Hollywood street stand in late 2018 into a multi-location venture led by Victor Delgado and Jorge “Joy” Alvarez‑Tostado: they’ve taken the closed Simplethings space at 10874 Kinross Avenue in Westwood (not far from UCLA) and are already installing new kitchen equipment and that all-important al pastor trompo, aiming to open in early February—likely after the Super Bowl—while a Beverly Boulevard site just west of La Brea is targeting a March reveal. The Downtown LA everyday restaurant at 609 S. Spring Street opened last summer, and they also run a weekly Smorgasburg slot on Sundays at the Row in Downtown. Fans and media have been lining up since almost day one, and LA Times co-critic Bill Addison said the mushroom taco from 1986 “eventually might be included among the essentials of the Los Angeles taco lexicon.” Expect daily hours of 11 a.m. to midnight initially, with longer late-night weekend hours planned." - Farley Elliott
