"Founded by Sindler’s family in 1967 and credited as the city’s first sushi bar, this long-running family operation planted its flag in Old Town along Wells Street and has operated at numerous locations across Chicago. Sindler washed dishes there as a teen, later worked at the Alinea Group’s Roister, and returned to the family business during COVID.
