"I noticed the new Kearny Mesa location on Convoy Street of Liuyishou Hotpot, an upscale Chinese hot pot chain that opened its first Southern California branch here; it's only the sixth U.S. location of a company with more than 1,000 franchises worldwide and was founded in Chongqing. The restaurant's main specialty is a spicy soup base made with chilies, Sichuan peppercorns, and beef tallow, available in three degrees of fiery heat, though it also offers a range of flavored broths including pork bone with Chinese herbs, fish filet with pickled vegetables, and duck with pickled radish. Diners cook their own food in tabletop pots where the seasoned, boiling broth prepares a vast array of meats, seafood, and vegetables — from marbled beef and organic pork belly to handmade cuttlefish balls, frozen tofu, oyster mushrooms, and lotus root — and the eatery's self-serve snack bar supplies small appetizers, fruit, and a comprehensive assortment of condiments for building your own dipping sauce." - Candice Woo
