"This new neighborhood spot opened in early January, replacing the Viet-Cajun restaurant Kau Bau and introducing a new fusion to the Montrose neighborhood. Chefs Diego and Makayla Ponce have dreamt up a menu of Peruvian-Vietnamese dishes, including a combination of Vietnamese shaking beef and Peruvian lomo saltado that results in delicious stir fry plated with rice and fried potatoes coated in salt-and sugar, plus al pastor pork chops and comforting Aji de gallina crispy spring rolls served with a side of tangy olive mousseline for dipping. For a treat, try the Pho-quila cocktail.
