"An eight-seat sushi restaurant in Beverly Hills opened in fall 2023 by chef Yusuke Yamamoto, Sushi Yamamoto serves an omakase that has recently incorporated Motoishi’s hand-made soba; the small room by the entrance that was once a rarely used private dining room under the previous tenant (two-Michelin-star Urasawa) is now dedicated to soba preparation. Because the restaurant is closed on Sundays and Mondays, owner Yamato Miura and Motoishi use the space for the Kaiseki Motoishi pop-ups, and Motoishi also contributes soba to the regular omakase where the soba course can feature elevated ingredients such as abalone or Hokkaido uni. Miura originally planned for Motoishi to work there for five years before taking over, but instead they are keeping the pop-ups small while Miura prepares a separate eight-seat dining room for Motoishi inside the upcoming Hilton in Arcadia, where they hope to add a stone grinder and expand the soba program." - Fiona Chandra
