"Since the speakeasy opened in 2007 it has been serving up elevated frankfurters from its neighboring hot-dog counter; past guest-dog collaborations have included chefs David Chang and Wylie Dufresne, and the current rotating contributor is Billy Durney. The Simonson Dog ($12), created by the reporter, is a salute to East Coast regional hot-dog styles: a beef-pork Thumann’s frank cradled in grilled pork roll and topped with mustard, chopped white onion, and a custom meat sauce (the reporter notes he’s thinking of adding cabbage)." - Robert Simonson
