"A Japan-born chain that’s opened its first Northern California outpost in the mall, Uncle Tetsu Japanese Cheesecake is a global phenomenon specializing in exceedingly light, fluffy Japanese cheesecakes with a delicate cheese flavor and a soft, souffle-like texture. With just two other U.S. locations (Los Angeles and Honolulu), I expect long lines for the original-flavored, still-warm-from-the-oven cheesecakes; coffee, matcha, and chocolate cheesecakes are still to come.
