The brisket is described as melt-in-the-mouth tender with divine smokiness and worth the two-to-three hour hike and extra three-to-five hours of rappelling — though you should expect the food to often be sold out by the time you reach the register. The meal is prepared by two elusive pitmasters, reputed ex-Navy SEALs known as One-Eyed Dave and Two-Eyed Chuck, who bluntly state, “We don’t believe in utensils, napkins, sauce, credit cards, chairs, compromises, disclosed locations, or your feelings.
