"Taking over the former Icarus space this July, Bar Dolly will be a simpler, “more timeless” extension of the neighboring Italian restaurant Dolly Olive, with a broader, more Mediterranean-leaning wine list (including bottles from Greece, France, and Spain) that aims to be affordable and approachable. The cocktail program will skew classic with an Italian lilt: a spritz menu featuring Aperol spritzes, Biciclettas, lambrusco and house-made limoncello versions; a house Negroni brightened with cranberry grenadine and served in an individual capped bottle for tableside pours; a hazelnut whiskey sour built with a Frangelico cordial; and margaritas bolstered with Montenegro. Nonalcoholic options include Pathfinder spritzes, tarragon highballs, and Phony Negronis. Food will largely mirror Dolly Olive’s dishes that travel well (with occasional specials like salami and cheese boards), the redesign will move away from Icarus’s Italo-Disco trappings toward a cleaner, sleeker aesthetic with walnut wood touches, and the roughly 30-seat space will offer table service while also functioning as a bar and bottle shop selling the wine list to-go; the team expects the same level of refined service but in a more casual format." - Brooke Jackson-Glidden
