The key here is the house-baked bread, which combines the soft fluff of white bread with the crisp, lightly flaky shatter of a French baguette. But the rest of the components are well thought-out, too, particularly in the classic #1 combo, which layers ham, head cheese, rich pate, and super-silky egg mayo with a generous portion of herbs and pickled veggies. (It never hurts to request extra mayo, though — and you can even take a container of the house-made stuff home.)
