"A pistachio-hued Soho-born deli founded in 1944 that became one of London’s most iconic fresh-pasta makers, famed for tagliatelle, tortellini and trofie. After evolving from the original Brewer Street deli into a restaurant operation in May 2018, the group has expanded rapidly—opening multiple sites across the capital and announcing a Marylebone village restaurant due in 2022 that will focus on larger sharing pasta dishes, hearty secondi and an extensive dolci offering. Investor Chris Miller is driving the rollout while executive head chef Masha Rener, a longtime patron who led the first restaurant, remains in charge of the food. The Brewer Street delicatessen still offers salads, sandwiches and fresh pasta for eat-in or takeaway, and the brand has even launched an outpost in Tokyo in 2021 that leans on its Soho heritage. Though some feel the proliferation of outlets risks diluting the original cachet, the enduring mass-market appetite for fresh pasta has sustained its commercial momentum despite Brexit and the pandemic." - Adam Coghlan
