He incorporates dishes made by his mother and aunts while highlighting the cultural similarities between Mediterranean and Middle Eastern cuisines including Turkish chile pepper (urfa) big eye tuna and salt-baked seabream, while the Yemeni spice hawaij flavors the prime New York strip.
