"Just a few days after announcing its closure, wacky LES sandwich shop Byggyz — run by Dewey Dufresne, father to famed science chef Wylie — now says it will keep chugging along, though with more limited hours. Grub Street reports that starting on July 7, the shop will be open on Saturdays and Sundays only. The restaurant still seeks investors, but until more moves are made, it will maintain a weekend opening. Dufresne will also still be popping up at Smorgasburg. Over the weekend, Dufresne’s team announced that the restaurant would close by July 1. It would have been a brief 10 months for the shop, which opened in September 2017 after years of build up and anticipation. Dufresne’s been in the sandwich business since 1969 and introduced his signature byggybeef sandwich at a San Gennaro festival in 2011. The shop serves a tight menu of sandwiches laden with ingredients, including that popular byggybeef containing braised beef short rib, American cheese, hot peppers, pickled vegetables, pomegranate demi-glace, and a special sauce." - Serena Dai
