"Opening in late spring 2023 at 198 Valencia Street, the second Kuma outpost will pour exclusive sakes sourced by Beau Timken of Hayes Valley's True Sake and will feature much-upgraded lighting and design; the ground-floor space in the new five-story complex (which is set to cast its shadow over Zeitgeist’s sunny beer garden) just came into the owners' hands, and they plan to use the same designers, Sweitzer Inc. and Pablo Ortiz, with an emphasis on distressed materials, wood screens, and poured concrete. The menu will be very much like the first — focused on straight-up sushi such as Hokkaido scallops and firefly squid — but with a major sake offering (they plan to sell every sake they have by the glass) and food-centric overhead lighting at tables and the sushi bar so, as the owners say, "the food is the star."
