"Opened November 3 by Dana Slatkin (Violet) and Brian Rigsby (Animal, Son of a Gun), this intimate steakhouse balances old-school vibes with modern twists, pairing an expansive wine list with a compelling slate of cocktails. Set inside a 1954 building by modernist architect Alfred Topper Wilkes, the brightened interior—reimagined by Fettle Design and Lewis|Schoeplein Architects—spans two dining rooms with antique accents, leather booths, dark woods, rattan, local artwork, a fireplace, and select pieces from Slatkin’s personal collection, plus a long Rossi marble bar pouring drinks like the Wilkes’ Steakhouse Manhattan made with bacon-infused bourbon and rye. Beverage director Charles Miller and Steve Wallace oversee a program that will spotlight a featured winemaker each season, beginning with Caldwell Vineyard head winemaker Marc Gagnon. Meals might start with molasses bread with salted date butter, steak tartare, or raw oysters before larger plates like fish and chips, a latke-encrusted chicken schnitzel, and a wedge salad with Point Reyes blue cheese, organic egg, crispy prosciutto, and pepitas; steaks range from a flat-iron to a 32-ounce rib-eye (with two sides) to a Snake River Farms wagyu New York strip, with classic sides including creamed spinach, mashed potatoes, and honey-glazed heirloom carrots. Dessert comes via Maude’s former pastry chef Yesenia Cruz, such as a cinnamon apple crumble. The bar also mixes a Blackberry Sour with Bombay Sapphire Gin, Meyer lemon, rhubarb bitters, blackberry and thyme syrup, and egg whites.
