"With their 2019 opening, brothers Ari and Pablo Schor sought to recreate the confluence of Spanish and Italian immigrant cuisines from their native Argentina, complete with a few nods to their Jewish roots, too. Slip away from Promenade Wellington into Beba’s snug dining room, perched on a residential street corner in Verdun, for a menu consisting of bright, seasonal seafoods and salads, brilliantly boiled and braised meats — tripe and tongue aren’t uncommon — and some lovely pasta dishes. The cooking is clever, yet emphatically simple, a style that leaves you feeling that every ingredient has been considered, has earned its place.
