"Operating as a takeout-only, preorder-only shop run by one man, Keith Freilich, Emilia’s Pizzeria uses an online ordering system (orders open at 8:55 a.m. for evening pickup) and rewards the effort: Schechter says “if you can do one of these, it’s a fun time.” The pizzas feel like “New York meets Neapolitan,” with plenty of char and leopard spotting on a crust that is delicate yet supple and chewy without being soupy. I tried the Brazilian — a Margherita variation with mozzarella and Parmesan, plus pepperoni and Mike’s Hot Honey — and found the whole experience, from the ordering to the single-operator craft, worth appreciating." - Dianne de Guzman
