"Holding court at Jerry Moss Plaza in Downtown Los Angeles through spring 2025 as part of The Music Center’s Emerging Chefs Program, chef Pyet DeSpain (winner of Gordon Ramsay’s Next Level Chef) is serving a vibrant menu built on Indigenous ingredients that celebrate her Native American and Mexican roots, community, and family. Appetizer highlights include a smoked duck breast ham with an orange-honey vinaigrette and a three sisters tostada featuring black beans, squash, and corn; mains include a braised bison with a berry barbecue sauce and a crisp-golden corn-fried quail served on a bed of quinoa; desserts include Mexican chocolate corn pudding and a sweet corn cake with maple-macerated berries.
