"One dish we’d nominate to represent the Pacific Northwest are jojos. Nobody does the thick-cut, deep-fried, and battered potato wedges better than this SE Powell food cart (they have a sit-down restaurant in the Pearl District). They’re not relegated to just a side here, though, as you can get them loaded with cheese and one of their ten different sauces (go with the jojo sauce, a blend of Duke’s mayo and ketchup).
