"No matter how you feel about Gracias Madre these days, this Mexican spot in West Hollywood makes some objectively great vegan nachos. Their simple but effective masterpiece comes heaped with soyrizo, pico de gallo, cashew cheese, and spicy aleppo pepper. If you come during the restaurant's Happy Hour, which runs weekdays from 2-6pm, they'll only cost $7.
