"Hibino does Japanese pop-ups throughout the Hudson Valley, including every Monday at Little King, a home goods store. There’s an impressively large selection of these onigiri topped with tiny delicate flowers, including ones with dried baby anchovies and shiso or wakame and cooked cod roe. The $18 bento box is also a great move for a more luxe Monday mid-day meal—it’s filled with ginger garlic chicken thighs, two onigiri, and a golden soft-boiled egg.
