"Mensouan Sunada in quiet Sugamo serves up a special wonton ramen that’s only available for breakfast and lunch. It’s called chuka soba, and it’s a style that pays homage to the dish’s Chinese roots. Chinese-style pork wontons bob like apples along the tops of every bowl, complete with extra wonton skins (just the noodle) that give the appearance of tiny ghosts dancing. The noodles themselves are thick and curly, acting as a perfect accompaniment to the colorful array of toppings—like swirled narutomaki, bamboo shoots, thick chashu, and a marinated egg—each providing its own pop of color and flavor.
